Tres Leches (Milk Cake)

Excellent flavor, and the filling/sauce is exactly the right amount to soak into the cake with just a teensy bit left in the bottom of the pan. I didn't use NEARLY as much sugar in the whipped cream--that would have been WAY too sweet! And I made the cake as a sponge-type, whipping the egg whites separately.

Yummy Blueberry Cobbler

Perfectly delicious blueberry cobbler!!!! I did reduce the sugar to 1/2 cup based on other reviews, so I had to give 4 stars instead of 5. Luscious with freshly whipped cream!

Hermit Bar Cookies

These have a nice flavor--but I'd double the spices and add some chopped walnuts next time, I think. I did add some ginger and grated orange zest. One problem I have with the recipe is that it says to bake for 12-15 minutes, but not how to tell when it's done. Typically, a recipe with a time range will say "this long, or until it looks/feels like this." I think I might have underbaked them a little ...

Creamy Au Gratin Potatoes

This came out good, but you must use REALLY small potatoes!!! I used only four, and 1-1/2 times the sauce, and my TWO quart cassserole was full to the top! It also wasn't quite done at an hour & 1/2.

Spanish Flan

Excellent, and easy--I actually got the sugar to carmelize without burning it! ;-) I did add a little cream cheese and an extra egg, to get it to firm up a bit faster, since I planned to bring it to a potluck only 3-1/2 hours after putting it in the oven. They loved it, but next time I'll try the recipe as written, since it seemed a bit heavy with the modifications.

Banana Muffins I

Very good, nice flavor and texture--but I kind of missed the slightly sweeter, harder top of muffins with more sugar. But they taste wonderful without more sugar ... !!!

Applesauce Raisin Bars

32 servings? You're kidding, right? My hubby's idea of a serving is two pieces of about 2x2 inches on top of each other! LOL!!! I wasn't so sure he'd like them, but I wanted them. I did use butter instead of shortening, of course--MUCH healthier, no trans-fats!

Get-Well Custard

Well, I made it according to instructions and it was too pale, too sweet, and watered out a LOT. So ... I made adjustments. An extra egg, 1/4 c. less milk, 1/3 c. sugar. I baked 15 minutes at 350, then reduced the temp to 325 for 35 minutes and it came out perfect!

Honey Limeade

Pretty good balance between sweet and tart, but too strong for us--I added more water. I also used half brown sugar (the mexican kind that's natural and comes as a cake to be scraped off) because it has a refreshing taste all its own that I thought would complement the limes well. It did!

Orange Pecan French Toast

Great flavor!!!! But a little too sweet. I cut the recipe in half and used 3 whole eggs, and real maple syrup instead of corn syrup ... and regular sliced whole wheat bread. Foolish me didn't read the reviews first, but it looked like too much brown sugar, so I reduced it, but not enough. I'll use half next time and I'm sure it'll be perfect.

Favorite Old Fashioned Gingerbread

Pretty good, but not as flavorful as the gingerbread of my childhood--and I did increase the spices, used full-flavor molasses. Something's missing, and I prefer it less tall so will use a larger pan next time ... but I'm enjoying eating it, and hubby insists that it's not gingerbread. I's Ginger Cake! LOL!!!

Chrissy's Sweet 'n' Sour Tomato Salad

Actually, I don't know if this is worth 5 stars as written or not, but mine came out yummy so there you go! I used apple cider vinegar and tossed in a little oregano, hubby said it was perfect and to write down what I did. A recipe, though, is really only a guideline ... and I didn't measure a thing! Oh, well. It'll be good next time, but probably slightly different again. Thanks for sharing this wonderful recipe!

Banana Cream Pie I

I have never made a cream pie before--and this one turned out PERFECT! I did make a meringue with the leftover egg whites. I didn't realize until after mixing up the crust and gathering ingredients that my pie pans were missing (we moved recently), so I made it in a round cake pan. It still came out scrumptious! Oh, and I followed the advice of another reviewer and packed the flour for measuring & wound up with PERFECT consistency.

Alan's Pie Crust

Pretty good, easy pie crust! I usually use a recipe that uses egg & vinegar, but it makes 6 crusts and I only wanted one today. The dough was easy to work with and puffed up nice & flaky for my Banana Cream Pie!

Best Guacamole

Very good, and very easy! Do leve it in the fridge for at least an hour before tasting, though--at first, it does taste too salty & too lemony. After resting a bit, the flavors meld and it becomes delicious!

Mediterranean Lemon Chicken

I made this using chicken tenderloins, since that's what I had handy. I added cream to the sauce & tossed it with linguine. I liked it, but it seems that there's something missing, and my husband said it was too lemony--but ate all of it! I'll probably make this again, and see what it needs. Rosemary, perhaps?

Banana Frittata

Not bad. Very quick & easy, though I did cut the recipe in half & used a smaller pan. I think it would have been tough to turn at full-size. I did add a bit of vanilla & cinnamon, poured a little cream & sugar over the top (didn't feel like whipping the cream! LOL!!!) Edited to add: I tried it this morning with some pitted, halved Bing cherries replacing one of the bananas and it was a hit!

Strawberry Ice Cream

A little too sweet, so I'll reduce the sugar by 1/4 cup next time ... and I used 1c. whole milk plus 1c. heavy cream for a slightly denser product. Came out good! I did just mash the berries, though, instead of pureeing them. I like the chunks!
