Dad's Cookies

I am SO glad that I reduced the sugar, as others suggested!!! I used 1c brown sugar and 1/4c white sugar--next time, I'll just leave out the white sugar entirely. I'll also reduce the oil to 1/2c and add 1/2c unsweetened applesauce & see how that works. I added 2t cinnamon, next time it'll be a full tablespoon--plus 3/4c raisins, but no coconut on hand. Thanks to a review, I toasted the oatmeal first and I really do think that enhanced the flavor. I also added juice from 1/2 lemon, in order to activate that baking soda a bit more, and it worked! They did NOT flatten all that much. In my oven, 11 minutes gave me cookies that are crispy around the edges and chewy in the middle--I like the texture.

Nana's Fastnachts

This is a good recipe and good technique, but I rolled less than 1/2 inch thick and that was, I think, too thick. The slits completely closed up during the final rise. I'll bring it down to 1/4 inch next time, and probably add vanilla, cinnamon, and nutmeg.

Sunday Morning Lemon Poppy Seed Pancakes

I used 1/4 cup lemon juice (1T instead of vinegar, one for itself, and an extra) and about 1-1/2t zest, plus 2t poppy seeds--made very nice pancakes that were lemony without being intrusive. Served with blueberries simmered a bit with a little real maple syrup. I bet it'd be even better with a few chopped pecans added to the mix. Yum! I'll do this again!

These are tasty! But if you're wanting to follow the instructions on shaping them with a thin center, plan on adding more flour and still having it be difficult to work with--this is like a thick batter or VERY loose dough.

Baked Stuffed Winter Squash

Well, I can't give it 5 stars because I changed it so much that I'm not sure it's even the same recipe ... but it came out pretty good! I used 1 large acorn squash, 1/2 pound of breakfast sausage, a dash of cinnamon and a dash of cloves, an egg, and oatmeal instead of bread crumbs. I sprinkled the top lightly with brown sugar and put a few dabs of butter before the second baking ...

Awesome Banana Pancakes

There is NOT too much liquid. That part is just right. I added about a tablespoon of coconut oil, a good dash of cinnamon, 1 teaspoon of vanilla. Used 1/2 teaspoon each of baking powder and soda. These are very moist pancakes. With my adaptations, I'd give this a 4 star rating.

Quiche Lorraine I

I followed the recipe as written, except that I didn't have light cream so used 1-1/2 cups heavy cream and 1/2 cup whole milk. It fit perfectly in my 9" pie crust and came out with a lovely custard consistency and very nice flavor. In order to prevent the edges from burning, and to get the bottom of the crust non-soggy, I did bake it in the center of the oven. I only needed to add a couple of minutes to the cooking time for it to be perfectly done.

True Blue Custard Crunch Pie

This is a VERY nice blueberry pie! I wasn't so sure, but gave it a try and will definitely make this again. I did use less sugar in the filling, and only 2 T butter in the topping (and it was still too much, I think), so because adjustments were necessary I dropped it from 5 stars to 4.

Hot Water Pie Crust I

This goes contrary to everything I thought I knew about pie crust, but it works! I used butter instead of shortening and got a lovely crust--I didn't even roll it out, just patted it in the pan.

Bread and Butter Pickles II

These are okay. They don't really taste like bread & butter pickles ... maybe needs more cloves & sugar? Maybe a cinnamon stick? I'm not sure. But I've never made pickles before, and at least they're edible.

Creamed Pearl Onions

I thought the sauce was rather thick, but hubby thought it was great--so 5 stars it is! Quick, easy, tasty. I did up the salt, based on previous reviews, and it really brought the flavor out!

Golden Pancakes

Very good, very easy, and a very nutritious balance of protein, fat, and carbs! I NEVER use "vegetable oil," instead using melted coconut oil, butter, or ghee. My husband loves 'em. I'll be making these again soon!

Butterscotch Pudding I

I used 2T cornstarch--just right! I used 2/3 cup brown sugar--STILL too sweet!!! Yowza!!! And I used vanilla that I made with rum ... yum ... next time, 1/2 cup sugar will be plenty, I'm sure. ... ... ... And the next time, I did use 1/2 cup sugar and it was perfect! On strawberries ... yum ... hubby had his on blueberries and enjoyed that, as well. I did of course temper the eggs rather than adding them at the beginning. Not a lump to be found, just stirring with a wooden spoon.

Apple Pie II

As written, the recipe would definitely be lacking--at the very least, cinnamon is a necessity in apple pie .... for me, anyway. I used Nitin apples that I got at the farmer's market--WONDERFUL for pie! They gave up so much liquid that I think half as much apple cider would have been plenty. I did use 4T cornstarch, 3 would probably have been just right.

Butter Flaky Pie Crust

This is a very tasty crust, but honestly--1 cup of flour would have made enough crust, I think. I rolled as normal, and it was rather thick and I still had excess. To give a bit better strength and richness for my apple pie, I used milk instead of water, worked great!

Apple Dumpling Cake

WONDERFUL!!! I gave 4 stars because I did adapt it a bit due to reviews. I mixed together a bit of sugar, a bit of flour, and a generous sprinkle of cinnamon then stirred up the apples in it, used a bit less sugar in the cake mix, and mixed a little sugar with the cinnamon for the topping. It reminds me a bit of snickerdoodles on top of apples, hubby says it's sort of like an apple coffee cake. I used apples I got at the farmers market, can't remember what type they are but they're definitely tart & firm.
