Marshmallow Fondant

This worked really well for us! I made two regular size batches. I cans see how some people had problems with their Kitchen Aid mixers breaking - you have to use the bread kneading hook after you put in a few cups of sugar. I only kneaded to mix in colors, came out smooth and putty like.

Greens with Cannellini Beans and Pancetta

This was really good! We sprinkled a little imported balsamic vinigar on it as we ate. I used kale and rainbow chard, as some greens are tough to find in New England this time of year. I cooked fully covered so the greens would get a little more tender.

The only thing we changed was that we only used pork liver because that is what we had. This needed a lot more onions. Maybe we have just lost our pallet for liver.

Camp Cornbread

This was very tasty, but something wen awry. It didn't rise or I didn't use enough mix or something. I used one box of jiffy mix, and they came out flat as a pancake in my pan! I will try it again with fresher mix and see if that helps, but my mix was not out of date.

Maple and Ginger Baked Beans

This is terrific - if you don't want to to deal with dry beans (or forgot to soak them overnight like I did) you can use 4 cans of unseasoned great northern beans. just rinse them really good and watch the amount of water you add, you won't need quite as much. This was a big hit and definitely a keeper!

Belle's Hamburger Buns

worth the work! I ended up using about a cup less flour than called for - I put the yeast in the warm liquid and added flour a cup at a time. Make sure you don't let it rise longer than 1 hour before splitting up the dough into buns, otherwise your buns are a little flat, but still flakey on the inside and chewy outside!

Real Potato Leek Soup

Very yummy! For a one pot variation, cook your potatoes in a 3-4 qt stock pot, remove them and drain. Then cook some bacon in the same pot until crispy, remove the bacon and some of the grease. Add butter and leeks, then broth and potatoes. Put crumbled bacon on top when serving.

Irish Soda Bread Cookies

Delicious - raisens make them perfect, and I added a little green food coloring for extra pizazz! I also used ground anise seed instead of the spices they suggested because that is what I had on hand, and it was perfect.

Cabbage and Noodles

Good one-dish meal - I cooked the noodles, set them aside, then made the other ingredients in the same pot. Would be good with Kielbasa instead of bacon, too.

Fluffy White Frosting

Don't double this recipe! I did and could not get the stiff peaks, my frosting came out too wet. Tasty, but sloppy. I just about burned out my hand mixer trying to get this to fluff, and had to keep adding cream of tartar to get it to stiffen. Also, I think the sugar syrup needs to cool a little before adding it. I will try this again, but only a two-egg batch!

Classic Caramel Corn

Delicious! I used my air popper, so baking the corn to get all the moisture out before pouring on the carmel was key. I had some carmel left over so we put it on apples too. We used light Kara syrup (like it makes a difference!) but it still came out great.

Scrumptious Salisbury Steak in Mushroom Gravy

Cooked this on a weeknight so I had to take some shortcuts. Cooked the beef with fresh mushrooms and put them in a casserole dish. Then I added cream of mushroom soup (condensed) + 1 can of milk into the pan and scraped up the bits to make a sauce. Poured that over the beef patties and baked on 350 for 1/2 hour. It was delish!
