Crescent-Wrapped Brie

Five stars because it's easy and excellent! I topped the brie with a tablespoon of apricot preserves before enclosing it with the crescent roll dough. I made it for a New Years treat for my fiance and I. It will be great to take to the next party we're invited to!

Noreen's Mom's Simple Summer Squash Bake

I used zucchini and yellow squash; they don't require seeding. This was only OK. Kinda bland. I added some "Pasta Sprinkle" seasoning (oregano, parsley, etc.) to boost it up some but it needs something more. I think it can be worked into something better--maybe some buttered breadcrumbs on top.

Spanakopita (Greek Spinach Pie)

This was my first attempt at Spanakopita and it was very tasty! A few variations: I cooked the spinach separately and then squeezed out some of the moisture. Sauted the onion, garlic and parsley and then added the already wilted spinach to that mixture. I used 12 sheets of phyllo dough and melted butter. Next time I'll use more phyllo on the bottom layer; maybe an 8 bottom/6 top ratio. I also used a 9x13 pan. Three 10 ounce bags of spinach.

Basil Shrimp

Five stars with the same modifications others made: reduced the Dijon mustard by half and marinated for about 20 minutes (just long enough for the coals to heat up on the grill). Oh this was restaurant quality and definitely will make again this summer!

Rhubarb Raisin Crisp

This was tasty and easy. I'll probably make it again. It didn't take 40 to 45 minutes to cook, though; only about 30 minutes and the topping started to get too brown so I pulled it out. Would have been great with some vanilla ice cream but I didn't have any.

Kielbasa Kale Stew

This was quite good. I made modifications based on others' reviews. And as I came on to review this, I noticed I left out the butter! Oh well, it was very good anyhow and I DID use a little olive oil as I cut up 1 pound of kielbasa and sauted it a bit with onions and garlic before adding it to the soup. I also used chicken broth rather than water but less, probably 6 cups. I don't think I used that much kale...I used a bag of fresh kale from Trader Joe's that was already chopped. It was my first experience using kale. I will make this again.

Mom's Chicken Cacciatore

Wonderful; my first time making cacciatore! A few modifications, based on what I had on hand...chicken broth in place of white wine. Rotel diced tomatoes with green chilies. Added some chopped fresh mushrooms. Served over spaghetti. Delightful!

Grilled Rosemary Pork Chops

These were tasty and I'll make again. I'll use less rosemary (personal preference); I used fresh rosemary. I used 1/2 cup of soy sauce and made up the difference in liquid with chicken broth. Like others, added some garlic and ginger, too. I also used six thick boneless pork chops.

Tender Breaded Turkey Cutlets

These were very good. I added a tablespoon a Dijon mustard to the sour cream (and I used full fat sour cream). I'll definitely make these again; they were quick, easy and tasty. I didn't have much problem with the breading. I coated the turkey cutlets and let them sit for about 30 minutes before putting them into the pan to help the crumbs "settle" on the cutlets.

Curried Scrambled Egg

Very quick & easy and and assuaged my curry craving. I added a touch of salt as I am NOT on a low salt diet and I cannot eat eggs without it. I didn't have chives; I used parsley. Definitely will be making these again!

Turkey Tenderloins

Wonderful! I used 3 TBL fresh rosemary from my herb garden. I marinated for about 1.5 hours and then we grilled them. Moist and flavorful. Definitely a keeper!

Slow Cooker Italian Beef for Sandwiches

This is now my "go-to" recipe for Italian Roast Beef! I have tried several recipes over the years but this one is IT. Like others, I used beef broth instead of water and basically doubled the sauce (that is to say, I used half the amount of roast beef as it was just for two of us--but used the same quantities of other ingredients). I served on buns with some sliced pepperoncinis. Yum!

Spicy Kielbasa Soup

Delicious! I made it on Sunday and had it on Monday so the flavors really had time to blend. I used a pound of skinless kielbasa and 2 cans of great northern beans. I used chopped tomatoes, not stewed (based on what I had on hand). I did not have a zucchini so I just omitted it. ALSO I made it on the stovetop, not the crockpot. I will be making this again & again.

Ham Loaf I

I've never had ham loaf before but my husband is from southeastern PA (York) and he had it as a lad and young man. So I tried this recipe and said it was right on. So thank you! I also enjoyed it and will be making this again. I only had 1 pound of ground pork so I used that. It was a bit crumbly so maybe that was from using not quite enough ground pork.

Sausage and Bean Ragout

I used MOST of this recipe, based on what I had on hand. It was great! I only had about 1/4 pound of Italian sausage, no fresh basil (dried), no fresh spinach (frozen), and Parmesan versus Romano. I added a dash of crushed red pepper flakes, some kosher salt and fresh ground black pepper. Still, it was great with substitutions. I think this is a very forgiving recipe for adjustments!

Curry-Coconut Shrimp

This was ok. It needs more BAM! It didn't taste *bad* it just didn't wow us. I left out the red pepper simply because I was all out. I didn't need the cornstarch as the mixture was already thick (fine by me; I don't like adding it if I don't need it). Needs more *something* ... more curry, more coconut, some salt...something. I'll work with it and tweak it, though. It's a good base recipe.

Pasta with Pesto and Scallops

This was quite tasty and easy enough. I happened to have almost all the ingredients on hand...I used a thin, whole-wheat spaghetti instead of fettucine because that's what I had. I think it enhanced the dish! I will definitely make again.
