About this Cook
I'm the mother of triplet daughters . I'm a critical care nurse by background, and I work fulltime as a hospice nurse. I love to cook and bake. I love to eat but I'm being really calorie-conscious these days so I try to practice portion control so I don't have to eliminate all the good stuff from my diet. I also like to scrapbook and read, time permitting! I like to find old cookbooks to add to my collection. My husband and I have too many cats (as we got married in September and he had 3 and I had 3 so we are now the cat family Brady Bunch). We also have a dog named Greta. I'm majorly addicted to recipes. I'm working on producing a cookbook for my daughters for when they move on to their own households.

Paska bread at Easter. We're traditional turkey at Thanksgiving and Christmas.

Sweet Bell Pepper Rice
I had a yellow pepper, not a red one, on hand and I wanted to use it. I used Penzey's "Pasta Sprinkle" in place of the dried basil & oregano (basically the same thing) and FORGOT about the Parmesan cheese! Still, we loved it! I'll make this again. Thank you.

Amazingly Easy Irish Soda Bread
This was very tasty but it was pretty dry. I kept checking the ingredients to make sure I didn't leave anything out because the dough itself was dry, even before baking. It tasted great, though. I'll have to experiment with the dry/wet ingredient ratio.

Asian Ground Beef and Pepper Saute
Very good! I didn't have any green pepper so I used chopped Vidalia onion. I doubled the sauce ingredients and a dash more crushed red pepper. Loved it!!
