Cinnamon Coffee Cake II

This is a great cake (even better the second day) I used 2/3c oil and one less egg and it still turned out great. I will be making this again!

Mexican Rice II

Green Beans with Hazelnuts and Lemon

Very fresh and delicious tasting! I did cook the green beans one day ahead and just added the seasonings right before re-heating. They were crisp and perfect! I used almonds instead of hazelnuts.

Herbed Turkey Breast

Oatmeal Chocolate Chip Cookies IV

Delicious! I only had Quick Oats and they worked fine. Note that my batch only made about 35 cookies, and they weren't even that big. Definitely not a lowfat taste.

Mini Cheesecakes I

This is a great recipe, but if this is your first time making cheesecake some of the basics are assumed. A couple of notes for "first-timers"... make sure you read the Cheesecake Tips section of this board. This recipe doesn't tell you some of the cheesecake fundamentals like 1) Make sure your cream cheese is at room temp before you start 2)Your batter should be smooth and silky. If it is lumpy your cheesecakes will turn out badly. If needed, throw the batter in a blender/food processor to get rid of the lumps 3)You do NOT want to wait for your cheesecakes to crack before removing them from the oven. They are done before they crack, when the center is still soft. After I learned these lessons, the recipe turned out well!

Baked Ziti I

We love this recipe-- but cut down on the cheeses quite a bit--just enough to lightly cover each layer Also, I use 1/2 sour cream and 1/2 ricotta. I've made it twice and substituted green pepper and/or mushroom for the meat. Turns out tasty and delicious!

Iced Pumpkin Cookies

Unlike some of the others who thought these cookies were too cake-like, I really like the texture of these cookies. Mine had a crunch to the outside, but the inside was soft and chewy. Nice flavor on its own, but much better with the icing. One note...15 min was almost too long to bake. Definitely not 20 min! I will definitely make again.

Mexican Salad

We love this!! After making many times, I have a few adjustments-- we add more beans (usually some kidney), use only 1 1/2 jalapenos, and use 1/2 the olive oil. Paired with some low-fat tortilla chips, this salad is always a hit.

Quick and Easy Monkey Bread

I have tried this twice now because of the good reviews and still have not had success. Because you let the mixture sit overnight, I end up with bread that has clumps of sugar/brownsugar/butter, rather than a nice even loaf.

Easy Broccoli Quiche

Great recipe-- I cut the fat by using less butter, less cheese and skim milk. Added mushrooms. It was delicious-- but it did take longer than 30 min. to set. More like 40.

Classic Tossed Salad

This salad is excellent-- but the dressing is not. I cut out more than half the oil and added balsamic in its place. The dressing is just oily by itself. Otherwise, it's a keeper!

Pork Roast with Thyme

It did not take anywhere near 3 hours for our 5lb. roast to reach 160! In fact, it was in for just over 2 hours (at 325 degrees, as directed) and was a bit overdone. Would do it again though-- easy with good flavor.
