Chicken Marsala

This recipe is very simple to follow and turns out being delicious. I made a couple modifications- Instead of pounding out the chicken cutlets, I cut them up into 1" cubes and only used 3 tablespoons of a vegetable oil/butter blend. I do not use any form of "cooking" wine anymore because it is salty garbage and you can get a decent-sized bottle of regular dry sherry for around 5 or 6 dollars. Since I only very lightly coated the chicken pieces with the flour mixture, I added a bit more oregano, salt and pepper to the sauce when it was almost done.

Salmon Ball

I also added a couple teaspoons of liquid smoke, and skipped on the fresh parsley. I made a mixture of panko breadcrumbs, dried parsley and a bit of Old Bay seasoning for the coating. Edit: The cheese ball ends up being mostly salmon to the point that you really can't even tell there's any cheese in it...I even used a couple ounces less salmon than what the recipe calls for. I didn't think it had a whole lot of flavor, even with adding the liquid smoke. I would definitely try again with a leftover fillet or 2 of fresh grilled or baked salmon instead of canned.

Turkey Stuffing Divan

I made this for myself and my boyfriend last night, and we both found it strangely addictive. It's like cheesy Thanksgiving in a pan! I was surprised we didn't fight over who got to take the leftovers to work for lunch the next day. I followed the recipe pretty much as it was written (I used pre-cooked Tyson chicken breast chunks), except to the mixture you pour over the dish, I added a little bit more milk, a couple tablespoons of Miracle Whip, and a dash of paprika.
