About this Cook
I am married and have five children. I think that one of my weaknesses is that I worry too much about what other people think of my cooking, so I'm afraid to invite people over for dinner often. That's something I need to work on. I have learned over time that it's my job to make sure my family has nutritious meals and mealtimes that nourish the soul. Cooking is not my favorite thing to do sometimes, but I feel a passion about trying new things, and I love the good feeling I get when I serve a meal that I've carefully planned and and worked to create. I think that my favorite things about cooking is the way that it shows love to other people and how food and mealtimes can create and strengthen bonds with others. I LOVE baking! That's something I'll never grumble about!
My favorite things to cook
Cookies, from-scratch cakes, homemade bread, quick bread, brownies, pudding (the cake-like kind that's served with a sauce), fruit cobblers and crisps, homemade spaghetti sauce, lasagna, stir-fry, chow mein, casseroles (I love to throw things together), tacos (though frying taco shells is not my favorite task, I love the smiles this meal gets!), things that use lots of garden veggies
My favorite family cooking traditions
When I was growing up, we had spaghetti every Friday. Often, my dad would cook the sauce. It was so yummy! Sometimes my parents would set up a big old blanket in the living room so we could eat without making too much of a mess while we watched a movie or two on a rented VCR. We loved that! My Dad also would make something called Birchermüesli for breakfast occasionally that he learned to make in Switzerland. I want to learn to make it, too. I also loved the smell of fresh baked chocolate chip cookies as I would come in the door from school on a cool fall day. My mom always seemed to be taking them out of the oven around the time we arrived. I also loved to help her make them at other times--and she always made sure we got at least one spoonful of dough to taste. She also let us lick the beaters anytime she whipped up a treat in the mixer. It's unfortunate we have to worry so much about food poisoning these days! Favorite Old Fashioned Gingerbread
Per previous reviews, I doubled the spices and added 1/2 cup of applesauce. I also did not set the timer for 1 hour and then walk away. I checked the cake from time to time until it was just about done and then took it out. This is absolutely delicious!!! My only frustration with it is that, as written, the cake overflows the pan. Maybe it's my altitude; I don't know. So instead of a lovely gingerbread smell filling my house, it smells like a campfire. :) Nevertheless, the gingerbread comes out tasting like Christmas and making you crave more. My recommendation is to use a 9X13 instead of a 9-inch square pan if you find that the batter comes almost all the way to the top of the pan. If I need to double the recipe, I'm not sure what I'll use that's larger than a 9X13 and deep enough, but it will definitely be worth finding out. This recipe's a keeper!

Fruit Pizza
The marshmallow creme and cream cheese make the best tasting spread I've ever had on fruit pizza!! You can cut down on the calories a bit by using the lower-fat cream cheese (also known as Neufchatel cheese). We used Betty Crocker Sugar Cookie Mix (2 pkgs.) instead of refrigerated cookie dough, and we baked it in a jelly roll pan because we wanted to serve it to quite a few people. (For a regular pizza pan, 1 package would work fine unless you like your crust really thick.) Please follow the instructions for whatever cookie mix/dough you decide to use regarding greasing your pan. Some say to grease; some don't. You will have better results if you do what the package or recipe says. This recipe is somewhat versatile; you can use just about any fruit you want, and arrange it in any way you like. This makes a beautiful and yummy dessert! I highly recommend using the Cookie Mix or a really good homemade cookie recipe for this--you will not be sorry, and anyone you serve it to will rave!

Frog Eye Salad
This is a great salad--we've been making it for several years. My husband requests this for all his birthdays, and any time we're asked to bring a salad, he pipes up with a hopeful, "Frog Eye Salad?" We have always done the basic pineapple and mandarin orange addition, but marshmallows and coconut are also a fun treat. I personally prefer it without coconut, even though I like coconut, because it ruins the texture for me. We like to add colored marshmallows for an even yummier effect, and I really like this salad with fresh seasonal fruit, too, like strawberries, peaches, grapes, oranges, apples, and so on. Other people I know love kiwi and strawberries in it. Be creative; it's a fun alternative to a regular fruit salad!
