I was about 13 when my grandfather started teaching me to cook. I have experience working indoors and out, on many different heat sources for upwards of 200 people. I always use spelt in all my recipes and never dust any bread with maize flour as it's not really fit for human consumption.
My favorite things to cook
arán sóide (soda bread), stobhach Gaelach (Irish stew), sour dough, chili, roast turkey, anything: lamb, buffalo, elk, venison, salmon, halibut, rabbit or squirrel.
My favorite family cooking traditions
Traditional Irish stew, sorry no corned beef and cabbage, it's not Irish. Thanksgiving dinner in all of its overdone glory, with everything being made from scratch.
My cooking triumphs
Homemade: nut brown ale, sourdough spelt soda bread, Irish stew, churned butter, wild crafted herb salad with homemade buttermilk dressing, walnut whiskey pie and whipped cream. (just one example of a meal I can get together)
My cooking tragedies
Other than the thanksgiving dinner where everyone got drunk and ruined everything, a song was written about that. There was the time I accidentally substituted baking soda for baking powder in some biscuits I made.
