I own a 7 year old Thoroughbred gelding called Sid. He is still a bit green but we are hoping to do some schooling shows this spring in dressage/jumping classes and progress to BN eventing as well. I am so excited! i love my horse:)
My favorite things to cook
I love to bake things and surprise everyone by how healthy you can make them! It's hard to picture whole wheat brownies, but they taste great! Or muffins with wheat germ or flax seed, ww flour, and honey! How about a crisp with the berries sweetened with stevia! I also like to make meals that are healthy but super yummy. Soups (Tortilla, Black Bean, and Lentil are favorites), Salads, and special sandwiches or wraps are my favorite! Simple but healthy stuff.
My favorite family cooking traditions
I hope to become notorious someday for cheesecakes and fresh pumpkin pie! (pumpkin cheesecake is awesome too)!
My cooking triumphs
Granola! I finally made a batch that was crunchy, tasty, and fresher than storebought. Everyday Food magazines are the BEST magazine subscriptions (after horse stuff :) you could ever get.They are chok full of great recipes, ideas, and lots of information about cooking your favorite fruits, vegetables and other foods.
My cooking tragedies
My first pie: I forgot to poke holes and it sunk! Although it still tasted okay.

Danish Oatmeal Cookies
I loved them! OMGosh these are so yummy! I agree with another reviewer, these do take like something similar to a pecan sandie (russian tea cake cookies). I didn't roll w/ confectioners, didn't need them. I used old-fashioned oats and also only had about 1/2 cup pecans so used about 1/4-1/3 cup of ground flax seed to add more nutty flavor. SOOOOOooo yummy especially the dough! ( I think I ate like half the batch, oops! :) The only things is that they ARE very tender and crumbly, almost dry. I will try to make smaller sized cookies next time to see if that'll help, I might even try replacing some of the butter with applesauce. This batch also doesn't make 5 dozen by the way, it's more like 3.5 or 4. Overall, VERY GOOD but VERY CRUMBLY

Chicken Tortilla Soup V
DELICIOUS!!! Put sliced avocado, shredded cheese, broken-up corn (blue or yellow) chips, and YUUUuuuuMY! I think we'll use sliced black olives on top next time too. You can use chips to eat it as well. This is my favorite kind of soup and I love how simple and delicious this recipe is.

Hearty Split Pea Soup
Very good for those looking for a hearty and healthy meal. I used 7 cups of chicken broth and came out the perfect smooth consistency (not that thick, gunky stuff that split pea soup can sometimes be) from the slow cooker. However, after refridgering, it was too thick again. I just added a little milk to thin it out and it was fine. Might use more chicken broth next time though. It was VERY good and would make it again.
