Fluffy Pancakes

Fantastic Recipe. This has become my go-to recipe for pancakes. Yesterday, we added blueberries to the batter. amazing! I do add 2TBSP sugar, because we like them a little sweeter, and add vanilla always. Cinnamon and nutmeg are good additions too. They cook up beautifully. Nice and light, crispy on the outside, fluffy on the inside. I use a 1/3 cup for a pancake, and the original servings only make about 6 pancakes, so double or triple the recipe! All in All, i LOVE these pancakes.

Roast Beef with Caramelized Onions

I don't use the Mrs. Dash blend, i make my own, but this recipe is fantastic and super easy. As other reviews have said, the onions don't caramelize, but instead get soft. They compliment the roast wonderfully. Make this with mashed potatoes and gravy and you've got a wonderful meal. :)

Blueberry Lime Mold

Loved it! I took it to a potluck, and it all disappeared! I got great comments on it! Will be making it again. I did find that i didn't need all 8 oz of cool whip. and it took longer than an hour to get anywhere near thick.

Corn and Black Bean Salad

Great Basic Recipe. Its sitting in my fridge right now just waiting for the pineapple grilled pork chops (also from AR) to finish grilling. You really don't even have to marinade it overnight. after reading other reviews, i did add some tomato and onion. Fantastic. I probably would have added avocado, but i'm out. also, i left out the chili pepper-My family isnt big on heat. Even with just the cumin, i'm SURE my 6yr old won't touch it. but that's ok. Awesome recipe for a hot summer evening. I'll be making it again!

Pumpkin Cream Cheese Muffins

These are very addicting. I followed the recipe, except i added some nutmeg and allspice to each part. and left out the pecans, since i dont like them, and i didnt have any. I tried a couple of ways to "fill" the muffins. some i filled with batter about 1/2 way, and then put cream cheese on them and then a little more batter around it. a few i filled about 1/4 way, then dropped the cream cheese on, and used another spoonful of batter on top of it. (they turned out just fine) The one thing i dont like, is that the cream cheese mix turned out more like eggy custard than "filling" like i was expecting. I will make again, maybe without the cream cheese maybe with. The muffins themselves were fantastic!
