Brown Butter Perch

Easy to make with a nice flavor for perch. We followed the recipe but added a teaspoon of Old Bay. It may have been the first time my wife ever had perch. She enjoyed it as did I with just a touch of tarter sauce.

Fiesta Chicken and Black Bean Enchiladas-dup

Had this recipe sitting in the file for quite sometime and finally got around to making it. The wife and kids really enjoyed it and it was pretty easy to throw the mixture together ahead of time then just roll the enchiladas and cover with sauce before cooking. I'd like to try it with corn tortillas in the future which I prefer over flour.

Slow Cooker Chicken Stroganoff

I was just looking for something to throw together for a hectic day and found this out of the blue and it was a hit with my wife and kids and so easy. We used one can of Cream of Chicken and one of Cream of Mushroom as I used a bit to much chicken. Turned out wonderful. I think we'll try some white wine next time and add fresh mushrooms in the last hour or two. I'll be trying this one out at the firehouse real soon and sure it will be well received.

Dutch Oven Mountain Man Breakfast

I've used this recipe twice while camping. The first attempt was done as suggested and seemed a bit dry, so the second attempt I mixed the cheese in with the eggs then folded it into the potatoes and finished it off with some sliced american cheese on top. Seemed more moist and better overall. Either way it's a great recipe and we found it to feed 6 easily with a little leftover.

Bow Ties with Sausage, Tomatoes and Cream

The only negative I could find is that there wasn't any leftovers. Recipe as listed fed 5 and was filling. Used italian diced tomatos and Bob Evans Italian Sausage which made things a tad easier during prep work. I'll be making this again for my family and at the firehouse as I know it will be a hit there too. Easy to prepare, cook and pretty cheap. Served it with fresh bread and red wine.
