Cheryl's Spinach Cheesy Pasta Casserole

I added a bit more spinach to up the health factor, but then I also added olives (which probably made it less healthy). Still, this recipe is WONDERFUL as is, I just had olives on hand and craved them haha. Instead of real bread crumbs, I lightly toasted some pumpernickel and I think that added a nice bit of spice to the casserole as well.

Big Soft Ginger Cookies

These cookies are delicious and stayed soft all day (as long as I could avoid them ... I'll probably never find out if they would last longer haha). I baked them for my students, who loved them! A couple of notes: the "15 serving" batch made almost 35 cookies! They are a beautiful dark brown if you use dark molasses (they look wonderful). Don't wait to see the cracks in the tops before taking them out. The first tray of cookies I made were burnt because I was waiting for the lovely crackling to appear. It appears as you cool them.

Easy-Bake Cheddar Biscuits

I love these biscuits! They are so easy and so delicious! I double the cheese and add some Old Bay Seasoning and they taste exactly like Cheddar Bay Biscuits!

Pumpkin and Sausage Soup

I don't actually eat meat, but I substituted Tofurkey Kielbasa and added some white pepper, black pepper, and cayenne pepper to replicate the flavor of Andouille. Other than that, I loved the recipe.

Asparagus with Cranberries and Pine Nuts

The combination of flavors in this dish are great, but I will be making some changes the next time I make it: Steam the asparagus instead of sauteing it (I found that it was too oily feeling for my taste). Add feta cheese on top (which is in the picture, but not in the recipe). Add a little pepper or other seasoning to accent the other flavors a little.

Vegetarian Sweet and Sour Meatballs

Disclaimer: I did alter the recipe a bit, but I think this gets 5 stars for the base recipe of the meatballs! (I haven't made the sweet and sour sauce yet, but it sounds just like what my mother used to make). I used almonds instead of pecans and oyster crackers instead of bread crumbs. I added cumin and a couple of diced radishes for spice. I also deep-fried them to save time (8 minutes total cooking time). Amazing! They don't really taste much like meat, but they are delicious and will go well with all kinds of dishes depending on how you spice them.

This is wonderful. I even fudged on the amounts of berries/vodka and it turned out great (we used blueberries and now we're trying cherries)! It is delicious and not too sweet.

Peppermint Cookies

Slow Cooker Macaroni and Cheese I

The cheese curdles when I made it this way. I really think you need to make a roux first before you start trying to melt the cheese.

Roasted Red Pepper and Tomato Soup

This soup has a great flavor, but the instructions are a bit of a mess. Taking out and adding in liquid is pointless. Next time I make this I will leave the tomato juice in and add less broth.
