Asparagus and Mozzarella Stuffed Chicken Breasts

I haven't tried this recipe yet but I'm giving it a 5, anticipating that it will live up to it & rating the recipe is the only way to make a comment. Many of the reviews indicate the chicken breasts become dry. I'm suggesting that you "brine" the chicken breasts first. The water/salt bath does help keep the meat moist. Brining uses more salt than the recipe calls for (I don't measure it), so you might want to leave the salt out of the recipe. I use this method when I cook chicken breasts. I'll rate the recipe again, after I've tried it.

Slow Cooker Spicy Black-Eyed Peas

Made this for New Years Day. Served it with hot, buttered, corn bread. Wonderful! I took other reviewers advice & replaced the water & bouillon with chicken broth. I used a ham hock, added 1 can of Rotel & omitted the cumin. A keeper for sure.

Apricot-Pecan Sweet Potatoes

This review is long over due. I love sweet potatoes any way they're cooked. I've eaten & baked sweet potato casseroles most of my adult life, but nothing touches this. I'm not a fan of marshmellows so decided to give this recipe a try. I Took it to a pot luck for our square dance club's Christmas dinner. Wow! They loved it. Dish was empty by the time I got to it. This will be my sweet potato casserole recipe from now on. Thank you for sharing. I prepared the dish exactly as written.

Pumpkin Roll Cake

I've been making this wonderful cake for years. The only difference in this recipe & mine is, that mine calls for 1 tsp of ground ginger, 1/2 tsp. nutmeg & 1 tsp vanilla. I had no problem rolling it but I do like the idea of rolling it in a pillow case, for a smoother surface. I make extra filling & spread a line of it down the top of the cake & prinkle with a few walnuts. It's always a hit. I will be making it this week for a Thanksgiving pot luck.

Vera Cruz Tomatoes

Very good recipe. I followed the recipe exactly, which I always do first. I used ripe,but firm, Roma tomatoes. I let them set to drain for 1/2 hour before preparing the filling & I didn't experience the watery problem or collapsed tomatoes that some indicated. For me, the hot sauce took away from the dish. I will make it again but with some changes. Maybe use ground cayenne pepper or finely chopped jalapeno & perhaps replace sour cream with cream cheese. Being a single person, I didn't wan"t to make 4 servings so I made the full recipe of filling, used 2 tomatoes & stuffed mushrooms with remaining filling. They were good also. Had them for dinner with rice & a pork chop.

Authentic Louisiana Red Beans and Rice

Fudgy Chocolate Cream Pie

Million Dollar Cake

I took this cake to a fund raiser (cake walk) for our Square Dance Club. It was a hit. I didn't drain the pineapple, as others suggested, thinking maybe the problem with the frosting being too thin was due to over beating the cream cheese. Careful as I was, mine still turned out too thin. I chilled it 2 hours, still too thin, so I added some coconut. It was still thin. At this point I'm thinking that I have to start over with the frosting. After analyzing the situation, I discovered that I had used "cook & serve" pudding mix! Having nothing to loose, I whipped in a small box of "sugar free, fat free" instant pudding mix, let it set for 5 min. Perfect! Amazingly, the additional pudding mix didn't alter the taste. I give the cake 5 stars because the problem with the frosting was my own.

Honey Cornbread

I love cornbread but usually don't like it sweet. Based on other reviews, I decided to give it a try. Delicious! I'm passing the recipe on to my daughter who much prefers sweet cornbread. P. S. I normally use a pre mixed packet but no more. Actually, this recipe takes only a few minutes longer to prepare & the pay off is worth it!

Pearl Baked Cream Onions

Served this dish with veal marsala & basmati rice for dinner last night. The aroma was wonderful but the dish was a little too bland. Used fresh pearl onions; blanched then rinsed in cold water for easy peeling. If I make it again, I'll try the small, yellow onions for stronger taste.
