Made this as a side tonight for some pork tenderloin. I added a little less than a tablespoon of dijon mustard to mine. It was really tasty!

"Pantry Raid" Chicken Enchilada Casserole

This ends up being just pure comfort food for us and it's easy to put together with ingredients that I usually have on hand anyway. Very budget friendly too. I do use the tomatoes with chiles added for a little added flavor and just bring the sauce together at the end when the chicken is done browning and that works great. Doing it that way you can end up only dirtying one dish, yay.

Best Bread Pudding with Vanilla Sauce

Made it exactly to recipe and it was fantastic. The best bread pudding I've ever had and the sauce was delicious even if mine didn't have a perfect glossy texture. That was probably due to me not whisking diligently enough though. If I had to change anything I would add a little less sugar because this was incredibly rich and would probably be too much for some people. Overall this was a solid recipe that my boyfriend and I loved and one that I will make again.

Tilapia with Creamy Sauce

Rating this 4 out of 5 because while it turned out delicious, I wasn't using the measurements in the recipe as they seem to be a bit much, especially the lemon juice. I seasoned everything myself, tasting frequently, and that's what I recommend instead of following the recipe exactly. Adjusted for taste this was a really delicious dinner.

Pan Fried Tilapia Sandwich

Very simple and a big hit with the boyfriend. I did make a few changes though. Left out the onion as he doesn't care for it much, had no chile pepper so I used a few drops of siracha sauce, and added a small squirt of lemon juice in. Came out very tangy with a hint of heat. Definitely taste as you go as the siracha can be pretty hot if you're not already a fan. Put over top of the fish, it was something I'll make again.

Very easy, filling, cheap, and delicious recipe that you can easily make your own with a few additions. Using a red and yellow bell pepper instead of green, and red potatoes with the skin still on made it even better. Cajun seasoning also compliments this really, really well. Will definitely make again.

Chewy Sugar Cookies

Really great recipe. They came out exactly as advertised with a nice crunch and chewy interior. I did have some trouble rolling the dough but chilling it for a few minutes in the fridge did the trick.
