Took some advice from the reviews, we did the following: used 2 eggs, 2 tsp cinnamon 2 tsp pumpkin pie spice, omitted ginger and all spice, 2 tsp baking soda, and added 3 TBS of melted butter. We also used QUINOA flour for a healthier option!! These were amazing pancakes, not too sweet and the quinoa gave them a slightly nutty taste as well!! The batter is very thick for a pancake batter, we just ladled out about 1/4 cup onto the griddle and quickly spread it a bit with the back of the ladle to make them a bit thinner and they were perfect and cooked all the way through!
