Mexican Casserole

To make it vegetarian, we made a few changes. Instead of chicken we added: - 1 can of vegetarian refried beans - 1 can Rotel diced tomatoes w/green chilies with the liquid (it says to add water anyway, might as well add some flavor!) And then instead of normal canned corn we used the Mexican style corn (it just has peppers added). It was delicious!! My boyfriend and I will be making this again!

Potato and Cauliflower Casserole

I tried this to use a head of cauliflower that I bought at the farmer's market, but I think there are better uses for my cauliflower. It was just OK. It needed something else, more flavor. I guess you could modify it somehow, but I'm not impressed enough to give it another shot.

Whipped Cream Cream Cheese Frosting

My boyfriend wishes he could give this more than 5 stars. I made it for his birthday cake and it was quite the crowd pleaser. Perfect for ppl who don't like really sweet frostings. FYI - we learned that it doesn't hold up in heat - at all.

Strawberry Banana Crepes

This was a hit! I made this for my boyfriend and he was very impressed. I made the filling and batter, and cut the berries the night before to save time in the morning. It took a while to get the pan at just the right temperature, but I think I'll get better form with practice. The cinnamon was a nice touch!

Delightful Indian Coconut Vegetarian Curry in the Slow Cooker

Needs some tweaking, but it's a great dish. I served over rice. It's quite spicy for my tastes but my boyfriend (who handles spicy food well) didn't have a problem. Here are the changes I made: 1. Used light coconut milk instead of coconut cream to make healthier 2. Used a whole 10 oz bag of carrots, didn't measure 3. Substituted 1 can chickpeas for 1 potato 4. Added some cauliflower (should prob be added with the carrots). 5. Added 1/2 an onion at the beginning Additional changes I want to make next time: 1. Add an extra can of chickpeas for protein 2. Add a handful of peanuts or cashews at the beginning With these adjustments - an awesome recipe! Delish!! Hint - spices will be cheaper at an Indian grocery store or in the international section of the reg grocery instead of with the normal spices.

Broccoli Cheese Chicken and Stuffing

I think it's a good start but needs some tweaking to get to 5 stars. Too much chicken for the amount of other stuff you have. I guess if you were serving this as a main dish with other sides it would work but I was hoping for a one dish meal so it's too much chicken. Next time I think I'll use 1/2 the amount of chicken, double the soup/milk mix, and double the broccoli. I think it also needs pepper. I liked that it used raw chicken to save that step, unlike many other similar recipes. I will make again, but just add these changes to get the ratios to make a 1 dish meal.

Double Layer Pumpkin Cheesecake

Delicious!! I used pumpkin pie spice and cinnamon to avoid buying more spices and that worked fine. Also added a tablespoon or 2 of sugar to the top layer and a little extra pumpkin. The next morning I added the leftover pumpkin and some spice to pancake batter - got rave reviews on dessert and breakfast!

Noodle Kugel

I've never made a noodle kugel before but this turned out very tasty! I made a 1/2 recipe and reduced the sugar as others suggested (3/4 c instead of 1 c for a 1/2 recipe). I think it would be fine with the full amount of sugar and will probably follow the recipe exactly next time.

Tiramisu II

This is the first and last tiramisu recipe I will ever use. I just made it for the 2nd time, with the recommendation of increasing the coffee/rum mix. The first time I just kind of poured that mix on a bowl of lady fingers and had some soaked and some without any. This time I tried to pour more evenly, with 3 times the mixture. Also, as someone else noted, you need the soft/squishy lady fingers, which I was able to find at a local Italian grocery. Also, as others noted, it really does taste better if you refrigerate for at least 24 hours before eating. My boyfriend likes desserts that aren't very sweet, and this has gotten the stamp of approval from him!

Honey Cashew Green Beans

Baked Ziti

As recipe is written here, it would get 2 stars, but with some changes, it has the potential for 3-4 stars. We were looking for a vegetarian ziti, so we gave this a try & added extra mozzerella (2c total), stirred parmesan into the sauce, and added dried basil & garlic. Next time I think we'll saute some onion, green pepper, & garlic together & stir into the sauce. Also, I think we'd use a different brand sauce since this was a little sweet for our tastes.

Candied Carrots

Very tasty! We used baby carrots and steamed them to keep more of the nutrients then made the sauce. My boyfriend ate more of these carrots than the baked ziti I made with them! This recipe is a keeper for us.

Slow Cooker Chicken Stroganoff

Delicious! Couple of changes I made: used 3 large breasts instead of 4, added ~1/3 c white wine at the beginning, and next time I'll add some frozen peas when I add the sauce. The chicken was starting to stick at the 5 hr mark, will shorten cook time next time. Also, the sauce was a little thick - I think I'll thin with milk when I re-heat. Served over egg noodles with steamed carrots. Delish!

Cauliflower-Cheese Soup

Very tasty! I took other recommendations and used chicken broth instead of water. I also added a little extra veggies and used whole milk to make it more creamy. I went with sharp cheddar instead of mild which was a good move. Delish! Next time I may add extra onion or try garlic to add pizzazz.

Mexican Bean Salad

I just made this recipe and it is delicious!! And several people said it will taste better a day later as flavors meld, so I am super excited. The only change I made was to use a small carton on grape tomatoes instead of a red pepper. Warning: It makes a ton!

Apple Maple Crumble Pie

Great flavor! I made a couple of changes that people recommended, and this bumped it up to a 5/5. I used honey crisp apples and lightly coated them in cinnamon as I put them in the pan, and cut maple syrup down to 1/2 cup. Then in the topping mix I added cinnamon and a pumpkin pie spice mix (cinnamon, ginger, nutmeg, etc). Took about 15-20 min longer to cook than recipe said. There was definitely some water in the dish from the apples, so next time I might try tossing the apples in cinnamon and flour as others suggested to thicken this up. Thank you!!

Classic Spanish Sangria

Very easy! The only thing I changed was to add one pear, as the writer suggested. So much flavor for so little work and my friends raved! I used Cruzan rum and Rex Goliath Free Range Red wine.

Butternut Squash Bisque

Fantastic! Brought this to a potluck and got rave reviews! I roasted the squash like others. Also, I added one clove of garlic and 1/2 Granny Smith apple as others suggested, and the optional heavy cream. I found that 2.5 - 3 pounds of squash will be enough for 4 cups.

Tomato-Cream Sauce for Pasta

I think as written, it would be decent. With some alterations it is fantastic! I tripled the garlic, used light cream instead of heavy cream & doubled the amount, added frozen peas towards the end of the garlic/onion cooking, and used an immersion blender at the end to make it a little smoother.

Cinnamon-Sugar Popcorn

This was a delicious, easy to make, and cheap snack. Brought to a party and got rave reviews. Two suggestions - like others mentioned, if you cook on too high of heat it will start to clump, but if you take off the heat and use a whisk it thins out well. Also, this was too much popcorn for the amount of topping. I'd guess that 2/3 c popcorn would be better. Thanks for the recipe!
