I Love my Coffee Drinks!
About this Cook
I married to my best friend and together we have 5 adult children and two grandbabies. We are in both in our early 40's and are foodies! We both work full time and savor our time together and as a family. Our children are a big part of our lives and we gather often and food is usually My thing. I love to show my love with food.
My favorite things to cook
Family style meals. When my kids were little I made dinner every night and sitting as a family for a meal was very important. I like comfort food. Now that we are childless we entertain adults a lot more and do dinner parties were we actually sit down as opposed to a kid party where it is BBQ or more simple foods. So I am getting more into Gourmet foods, apprtizers and cocktails. Servings Meatloaf and mashed potatoes is great for my family..not so much for a dinner party.
My favorite family cooking traditions
Tamales at the New Year! This has been a fsmily tradition since I was very little. I used to do it with my Aunties, Mom and sisters. Now that everyone is scattered I do it with my friends. It is an all day opperation...The day starts early with Pan Dulce and Cafe..the woman come one by one with their masa and carne...woman sitting around a table, talking, cooking, laughing, drinking...and making tamales. The men playing cards, talking, watching movies..waiting for the Tamales to be done for a BIg dinner at the end for all to enjoy. They freeze well and can be enjoyed through spring.
My cooking triumphs
Trying new things is always a triumph for me. I love to bake and hope to go to school to get those skill polished.
My cooking tragedies
Trying to make my own Sope Shells! They came out hard and dry..they could have hurt someone if thrown...never again. Now I just buy them at the Market and fill.

Thighs on Rice
This meal tasted like your typical chicken and rice casserole. I also used chicken broth and 1/2 white and 1/2 brown rice. Once the casserole was done I sprinkled Mozarella cheese on top of the chicken and broiled for a min or so..added alot of flavor. I would make again..and the family loved it. Good weeknight meal with a salad...but not a recipe I would share.

Swiss Chicken Casserole I
This is a super easy weeknight meal that packs alot of flavor and is easy on the pocketbook. I now buy boxes of stuffing when it is on sale in anticipation of making this meal. No need for a starch with the stuffing on top..serve with a veggie for a complete "Homestyle" family meal.
