No Name Orange Roughy

Reviewed: Jun. 20, 2002
This was GREAT -- so easy and healthy!! I did add a clove of minced garlic w/ the onion. I would recommend draining the liquid from the tomatoes and reserving it, just in case you need it. I used fresh basil from my garden and this was a hit w/ my family !!! Thanks Christopher!

Beef Tenderloin With Roasted Shallots

Reviewed: Oct. 30, 2002
This is outstanding!!!!!!!!! I made this for my BIRTHDAY DINNER, and everyone LOVED it. I followed another reviewers' substitution, as I did not have any port, and used red wine w/ a little brown sugar. I also used finely chopped sundried tomatoes in place of the tomato paste --- GREAT SAUCE, I froze what was left....too good NOT to!!! Thanks, Christine, for a really fine recipe.

Jamie's Cranberry Spinach Salad

Reviewed: Nov. 10, 2002
This is excellent, especially during fall/holiday/winterseason!!! Dried cranberries make it sweet and nuts give it crunch. Dressing is great and can be made ahead, only I cut the sugar just a little. I also do my almonds ahead. I usually use romaine and spring mix (mesclun) instead of all spinach, and add more greens as we LOVE salad, as this dressing makes alot. I have shared this w/ alot of my friends, and they just love it! I'm making it for Tgiving, for something "green" and different! Try it, you will LOVE IT! Thanks for a keeper, Jamie!!!!

Apple Crisp I

Reviewed: Nov. 10, 2002
This is really GREAT!!! Very easy to make - I did add more apples and added cinnamon to them, and used pecans. Also, as suggested, put some of the crust on the bottom. Great fall dessert, esp w/ vanilla icecream!!!!!! A keeper!!!!!

RamJam Chicken

Reviewed: Nov. 10, 2002
This is very good! Partially baked chicken on skewers and then marinated them in this over night. I have baked mine (b/c I had to make alot for a party and that was the easiest), but love them grilled, too. I make extra marinade for when serving from a chafer to help keep them moist.

White Pizza Dip

Reviewed: Nov. 16, 2002
This is a GREAT DIP!!! Very easy, and travels well. I do add the pepperoni, and also cut up extra bread.....I toast the bread, brushing w/ olive oil that I have heated w/ crushed garlic. I double the recipe b/c this one goes fast. Everything can be done ahead, including the bread....just pop it into a ziploc bag!

Spiced Pecans

Reviewed: Dec. 13, 2002
These are GREAT!!! Only recommendation is that you bake these at a much lower temp and turn them very frequently. I did mine at 300, and used a spatula to turn them about every 8 - 10 min, as they will burn quickly w/ the sugar in them.

Best Spinach Dip Ever

Reviewed: Feb. 5, 2003
This is great and I have been making it for years. Use a full pkg of spinach...I usually double the recipe and refill the bread bowl, b/c it goes fast. I use round PUMPERNICKEL BREAD for the bowl, and cubes of rye and pump, or can use party rye slices and party pump slices. I also use light ingredients.

Makes GREAT gifts w/ a nice little plate and spreader!!!! My friends LOVED it for Xmas!!!!! Thanks Dinah for bringing this one "back to life"!!!!!!

Basil Shrimp

Reviewed: Jul. 18, 2003
This was excellent and very easy. I cut back a little on the butter and added a little more olive oil and lemon juice. I also eliminated the skewers and just put the shrimp in my grill basket!! Served w/ couscous and a salad. Will definately make again...may add scallops next time, also! Thanks Gail!!!!

EXCELLENT RECIPE!!! I added more hot pepper sauce, and used a few "squeezes" of Dijon mustard instead of the dry......they were a huge hit at our house!!!! Will definately make these again!!!

Rich and Simple French Onion Soup

Reviewed: Jan. 28, 2004
Excellent soup and VERY EASY!!! I used the Campbell's Beef Broth and it said "double strength" on the can.......it was fine!!! I did not cook the onions till totally tender, as they got tender as they simmered. Didnt have any swiss cheese, so that was eliminated. I ladled soup into our "big cups", topped w/ CROUTONS, instead of the bread, sprinkled w/ parm, and topped w/ provolone. Popped into the microwave to melt the cheese a bit and EVERYONE loved it!!!!

Kabob Marinade

This is GREAT!!!! I marinated, in separate ziplocs, steak, chicken and veggies (zucchini, yellow squash and egglpant slices). I did use less oil than recipe called for, added more garlic, and used Grey Poupon -- I also altered the amts - eyeballed them. A keeper and will definately make this one again. Thanks for sharing, Jon!!
