P.J.'s Fresh Corn Salad

Took this to a picnic yesterday and it was a huge hit!!!!! I mixed up my own vinaigrette using white balsamic vinegar. Everyone LOVED it!!!! Thanks for sharing - this is a keeper!!!!

Chicken Monterey

Thank you all for your great reviews....I agree w/ all of you that there needs to be more sauce, and I also double it when using breast halves and adapt as needed...more wine...less celery salt, etc - forgot to mention that in orig recipe, but as any good cook knows....you have to be able to adapt as needed to any recipe!!!! I love all the helpful hints that I get from the reviews of various recipes - I can tell who loves to cook and I am NEVER insulted when my recipes are critiqued! ALSO, try using chicken cutlets, as they are thinner and take less time to pan fry than regular breast halves - and I add Garlic Pepper to the flour to bread the chicken in b/c we love garlic, and I add about 3 cloves of garlic, and pre cut mushrooms will cut down on your prep time. Sauce is probably enough if you use the cutlets, as opposed to the breast halves, and you can cut down on the baking time if using the cutlets. So glad that everyone has enjoyed this recipe, my best friend shared this recipe w/ me several years ago, and it has been a favorite around our dinner table!!!! Doreen

Grilled Asparagus

This was delicious -- I did saute some fresh garlic and fresh gingerroot in the olive oil!!! I am totally into grilled veggies, but never thought about doing asparagus!!!! Thanks, Larry!

Basil Shrimp

This was excellent and very easy. I cut back a little on the butter and added a little more olive oil and lemon juice. I also eliminated the skewers and just put the shrimp in my grill basket!! Served w/ couscous and a salad. Will definately make again...may add scallops next time, also! Thanks Gail!!!!

Baked Orange Roughy Italian-Style

This was great!!!!!!!!! I also have made my boneless chicken breasts this way for years --- never thought to try it on fish!! I add McCormick's Garlic Pepper to the crumbs - great fish recipe!! Thanks for sharing!!!! Doreen

Grilled Salmon I

This is FABULOUS!!!!! I used a 3lb whole piece of salmon, and I should have got another!!!!I did 1 1/2 the marinade b/c of the size of my salmon. Only thing I added was 2 cloves of fresh minced garlic, and some grated fresh gingeroot and I used low sodium soy sauce!!!!!! Thank you TINA!!!!!!! This is a KEEPER!!!!!!

Luscious Spinach Artichoke Dip

I made 4 recipes of this WONDERFUL dip for my sisters wedding!!!!! There was none left!!!!!!!! Making it again for my daughters' college grad party!!! Excellent recipe. I used Nonni's Toasted Bread Rounds (Pannetini) from Costco and mixed them in w/ Frito Scoops....YUMMY!!!!! Thanks for sharing!!!

Pork Roast with Sauerkraut and Kielbasa

I always add quartered, cored apples and brown sugar to my pork and sauerkraut. I also do sausage, but do it seperately w/ cut up peppers and onions and add a sauce of brown sugar, catsup and soy sauce and bake. YUM!!!!

Seven Layer Dip II

This is the BEST!!!!! Got this recipe from a friend 20 yrs ago. I find that some of my "OLD" recipes are being brought back to life!!!! Check out my recipe for Ruth's Roquefort Cheese Ball, either under doreen or doreenbuch under submitter....I am NOT into cheeseballs, but this is really good!!!! Can make and freeze, too!!!!! Makes GREAT gifts w/ a nice little plate and spreader!!!! My friends LOVED it for Xmas!!!!! Thanks Dinah for bringing this one "back to life"!!!!!!

Eggplant Parmesan II

This is great....have been making it this way now for about a year, and I love the "no fry" thing!! As every good cook knows, you need to alter recipes a bit..I add more sauce (and cheese) than it calls for, and that softens the eggplant when it bakes...as far as it being brown..who cares!!!! The sauce makes it red, and the fat content is lower than frying!!! Fry or bake, they both end of tasting the same --- one is just lower in fat.....and.....it is GREAT!!!!!! There is NO WAY to mess this great recipe up!!!!

Chicken Breasts Pierre

This was fabulous. I used the thin sliced chicken breasts, the cutlets, and cut them in half before breading, so the pieces were smaller. I one and a halved the sauce, and I elimiated the water, as was suggested, and added 1/2 can of Rotel Tomatoes, drained, and elimated the hot sauce!!!! Served over NO YOLK Noodles w/ a salad, and there were NONE left here!!!! Very easy to make!!!

Best Spinach Dip Ever

This is great and I have been making it for years. Use a full pkg of spinach...I usually double the recipe and refill the bread bowl, b/c it goes fast. I use round PUMPERNICKEL BREAD for the bowl, and cubes of rye and pump, or can use party rye slices and party pump slices. I also use light ingredients.

Beef Tenderloin With Roasted Shallots

This is outstanding!!!!!!!!! I made this for my BIRTHDAY DINNER, and everyone LOVED it. I followed another reviewers' substitution, as I did not have any port, and used red wine w/ a little brown sugar. I also used finely chopped sundried tomatoes in place of the tomato paste --- GREAT SAUCE, I froze what was left....too good NOT to!!! Thanks, Christine, for a really fine recipe.
