April's Chicken Fried Rice

Try making the rice ahead, and refrigerating it - it gets to soft if it isnt chilled first.

Chicken Monterey

Thank you all for your great reviews....I agree w/ all of you that there needs to be more sauce, and I also double it when using breast halves and adapt as needed...more wine...less celery salt, etc - forgot to mention that in orig recipe, but as any good cook knows....you have to be able to adapt as needed to any recipe!!!! I love all the helpful hints that I get from the reviews of various recipes - I can tell who loves to cook and I am NEVER insulted when my recipes are critiqued! ALSO, try using chicken cutlets, as they are thinner and take less time to pan fry than regular breast halves - and I add Garlic Pepper to the flour to bread the chicken in b/c we love garlic, and I add about 3 cloves of garlic, and pre cut mushrooms will cut down on your prep time. Sauce is probably enough if you use the cutlets, as opposed to the breast halves, and you can cut down on the baking time if using the cutlets. So glad that everyone has enjoyed this recipe, my best friend shared this recipe w/ me several years ago, and it has been a favorite around our dinner table!!!! Doreen

Three Cheese Manicotti

This is really good, but you can cut down on cooking time by not cooking the manicotti, stuff them "raw", so to speak. Add a cup of water to your spag. sauce....heating it in the microwave before you are ready to bake your pasta.....pour over your manicotti before baking...cover and bake!!!!!

Grilled Salmon I

This is FABULOUS!!!!! I used a 3lb whole piece of salmon, and I should have got another!!!!I did 1 1/2 the marinade b/c of the size of my salmon. Only thing I added was 2 cloves of fresh minced garlic, and some grated fresh gingeroot and I used low sodium soy sauce!!!!!! Thank you TINA!!!!!!! This is a KEEPER!!!!!!

Sausage Stuffing Balls

I had a recipe very similar to this..only you make Chicken Stovetop Stuffing according to the directions... I use sweet italian sausage and onion..no egg or celery and add cheese...form into balls and bake.....YUM!!!!! Doreen

These were OK....but try Party Pumpernickel bread, spread w/ mayo, top w/ cucumber and sprinkle w/ lemon pepper!!!!! YUM We love them the next day!!!!

Deb's Scallops Florentine

This was very good. I, too, read the other reviews and did not cook the scallops ahead of time, I used fresh baby spinach, used milk instead of cream, italian bread crumbs -- and I added some fresh crushed garlic, not alot, but it just gave the sauce a hint of it -- YUM!!!! I also elimated the mozzarella b/c the parmesan is perfect!!! Served it over NO YOLK noodles!!! We loved it!!! Thanks for sharing, Deb!!!!

Baked Orange Roughy Italian-Style

Cabbage Roll Casserole

My family loved this, but I added 2 cans of Rotel Tomatoes, and envelope of dry onion soup mix to it!!! It does make a VERY FULL 9x13 pan, but the cabbage goes down as it bakes, but I also used a turkey roaster. Very easy and good -- would make again!!!! Much easier than cabbage rolls!!!!!! Thanks for sharing

Chicken Breasts Pierre

This was fabulous. I used the thin sliced chicken breasts, the cutlets, and cut them in half before breading, so the pieces were smaller. I one and a halved the sauce, and I elimiated the water, as was suggested, and added 1/2 can of Rotel Tomatoes, drained, and elimated the hot sauce!!!! Served over NO YOLK Noodles w/ a salad, and there were NONE left here!!!! Very easy to make!!!

California Grilled Veggie Sandwich

This was FABULOUS!!!!! Only thing different I did was add portabello mushrooms, and I marinated all veggies in a balsamic vinaigrette before grilling....YUM!!!!! I also used a big loaf of bread and cut it horizontally and made it like a big sub that I then cut into pieces!!!! EASY and GREAT!!!!Thanks Heather, for a GREAT recipe!!!!

No Name Orange Roughy

This was GREAT -- so easy and healthy!! I did add a clove of minced garlic w/ the onion. I would recommend draining the liquid from the tomatoes and reserving it, just in case you need it. I used fresh basil from my garden and this was a hit w/ my family !!! Thanks Christopher!

Buffalo Style Chicken Pizza

This was good for a change!!! I marinated my chicken and grilled it and then cut it up - or you could use leftover chicken! Definately use the blue cheese dressing sparingly. We LOVE blue cheese, and I actually divided the bottle between two baboli's, and it was still a little too much -- definately just use enough to cover the bread shell - may add some fresh crumbled blue cheese next time. There are no leftovers - will make again!!!!!!!
