The great thing about quiche is its versatility. You can use your favorite veggies and meat, or no meat at all. Also, different cheeses work well. I liked the flavor combination resulting from these spices. I included the vinegar. For the Monterey Jack portion of cheese, I used a combo of MJ and Colby. I didn't have any tarragon and couldn't find any in our small town, so that was left out. I put in a good amount of finely chopped broccoli. My husband and I both really liked this. With him taking lunches everyday, the second quiche never made it to the freezer! Reheats well in the microwave. Thank you for this fine recipe.
