Rice-so-Nice

I have been making this recipe for a couple of years now (I thought I had a review already)...with a few changes...1/2 cup butter just seems ridiculous... I put in maybe 2 tbs, it really doesn't need all that much. Instead of mushrooms, about the last 15 mins or so I mix in a bag (or however much you like) of frozen (thawed) mixed vegetables (usually a mix of corn, green beans, carrots, peas).

Yummy Pecan Pralines

Wow, these were easier than I thought. I only made half the recipe to test it. I didn't have a candy thermometer, nor did I do the cold water test. I just kind of guessed and it came out perfect. I poured the batch into half a foil lined cake pan to about 1/4 inch thick. Let it cool, then broke it into pieces. Will definitely be making this again, and will be making the full amount next time!

Scones

I've been using a different scone recipe on this site, but several weeks ago I decided to try this one.. I've made this about 5 times now! One batch I added in cheddar and bacon..yummmm! This is my now go to recipe, as is, and as a base to add in. Only thing I suggest, is for a savory scone such as the cheddar and bacon, is to decrease the sugar a little bit.

Sweet Dinner Rolls

These are the best rolls I've made so far. I used my stand mixer to knead the dough and let rise an hour. Only others changes I made were I used soy milk, and made these into rolls instead of crescents, and brushed on butter on the top before the 2nd rise. Will definitely make this again.

Double Layer Pumpkin Cheesecake

I don't eat cheesecake, but everyone I've made this for so far love it. In fact, the one I made last night, I forgot to put the eggs in at first. I only got 1 egg into the pumpkin mixture part. I don't think anyone noticed.

Chewy Crispy Coconut Cookies

Yummy. Instead of dropping by teaspoon, I made mine about a large tablespoon size, baked 10-11 mins. Makes about 3 dozen. I think teaspoon size of dough would be very very small cookies.

Caramel Macchiato Cheesecake

I don't eat cheesecake, but this sounded interesting so I made it for those who do. Needless to say, 5 stars, it went over extremely well. One person told me I had to make this everyday! I made some very minor changes though. The smallest pan I had was 10", so I used 2 1/4 cup graham crackers (after the fact, I think 2 in the original recipe would've been just fine), and used only 6 tbs of butter. After reading some of the reviews, I put a pan of hot water on bottom shelf of oven, baked at 300 degrees for 1 hr 15 mins, turned the oven off and let the cheesecake sit in there for an additional 30 mins before taking it out to cool. Will definitely be making this again even though I don't eat cheesecake.

Banana Oatmeal Bread

Yum!!! Came out really moist. I read some reviews and only made a slight change. Instead of all shortening, I used 1/4 cup butter flavored shortening, and 1/4 cup applesauce. And I like raisins so I put in a whole cup. Will definitely be making this again.

Sopapilla Cheesecake Pie

Brought this in to work for Cinco de Mayo. I didn't have any, but from what I hear it was the best ever. To the point, where some took more than their share and some didn't get a chance to sample it at all. I did follow a few reviewers suggestions, I cut the sugar down to 3/4 cup, and I used 2.5 packs of cream cheese (because I had 1/2 pack leftover and didn't want it to go to waste). And I did not use the honey. This is definitely a keeper and will be making it again.

Clone of a Cinnabon

Even with over 4000 reviews, I thought I'd add mine. These are not quite like Cinnabons, but they were definitely worth cheating on my diet! I don't have a bread machine, and without reading the reviews I kind of wing'd it. I used a stand mixer, and let it rise in a warm oven, took about 1.5 hrs. the 2nd rise, I let it rise for 35 mins. Then baked at 350 for 22 mins. Came out perfect! I did not use the cream cheese frosting, I made a regular glaze, I didn't measure anything, just a huge cup of powdered sugar and then slowly poured in a little milk at a time till the consistency I liked. Will definitely be making this again.

Grandmother's Buttermilk Cornbread

I didn't have any of this, I made it for a friend of mine. She said it was darn good (she actually used a different D-word but I figured it was inappropriate for this site). Will definitely make this again, and maybe next time I'll get a chance to try it myself.

Easy. I thought it was too spicy for me, but didn't think that was a reason to down it a star. I think next time I will just use a plain can of tomatoes, and a can of mild diced chiles that I know won't be too spicy for me.

Baklava

Excellent!!! The only downside was that 1 pound of nuts (I used mix of walnuts and pecans) was way too much. I had enough leftover nuts to make a second batch. But no one complaining about having to make the second batch. Will definitely be making this for years to come!

Ground Pork Cake with Salty Egg (Haam Daan Ju Yoke Beng)

very good!! I can't believe I found a recipe for this. My mother's recipe was "a dash of this, a dash of that". I never figured it out. This tastes almost as good as mom's was. Only thing different was I used 2 salted eggs (my mom's homemade) and stirred it raw into the pork, instead of hard boiling first. I'll be making this again.

Melt - In - Your - Mouth Shortbread

These really were easy and melt in your mouth. The only problem I had was that the dough didn't come out like cookie dough, it was all crumbly, I had to use my hands to knead it together, then rolled them up into balls. Directions said to beat for 3-4 mins. I probably only did that for 2, so I don't know if thats what the problem was. Either way it was still easy, and will definitely be making it again.
