Mac and Cheese II

This was just ok. I've had better. The cheese was a thick consistency after baked. I think this could've used maybe a little salt too.

Excellent and Healthy Cornbread

Did I do something wrong? Only thing I did different was I put this in a round pie pan. This was extremely dense and tasteless. Adding butter or honey would not do it any good.

Chewy Crispy Coconut Cookies

Yummy. Instead of dropping by teaspoon, I made mine about a large tablespoon size, baked 10-11 mins. Makes about 3 dozen. I think teaspoon size of dough would be very very small cookies.

Macaroni and Cheese V

This was pretty good. I made some minor changes. I used 9oz of shells pasta, used 1% milk. Recipe says salt/pepper to taste, i used about 1/4 tsp pepper and 1/2 tsp salt. For the topping, I just sprinkled on the bread crumbs without the butter. Will be making this again.

Quick and Easy 20-Minute Chicken Posole

This is the first time I've ever had, let alone made posole, so I have nothing to compare it to. But it was really good. Only thing I did different was used chicken thighs and browned on both sides after the onions cooked for a few mins before adding the rest of the ingredients. I omitted the olives. Will be making this again.

Mayonnaise Biscuits

Wow, that was easy. Its the middle of the night and I wanted biscuits to have with my brisket & gravy that I had made earlier and put away. Wanted an easy recipe, and this could not be easier...I had to take the gravy out and dip one of the biscuits. Will definitely make this again. (I used fat free mayonnaise)

Mom's Macaroni and Cheese

This was good, but I've had better. I did make a couple of changes though. I had 4 oz of Velveeta left so I used that and lowered the cheddar cheese to about 3/4 cup. If I make this again, I would probably use the same ratio, and increase the amount of macaroni to 2 cups like some readers suggested.

These weren't spectacular, but were good enough for a 4 star. Only thing I did different was used only 1/4 tsp cloves, because I thought with 1/2 tsp the clove flavor would be too overpowering.

Southern Peach Cobbler

Other than using just about half the syrup, I followed the recipe to a 't'. After the baking time there was this big puddle of liquid in the middle of the dish. I took the dish out and actually poured the liquid (juice or butter?) out. Then baked another 15 mins. When it came out, the center was still all wet and the batter part was never cooked through. Only reason I gave this a 2 star was because the edge of the dish did get cooked thoroughly so I was able to taste that area, and that was ok. I won't be making this again.

The insides were still a bit gel-like, but I think they were supposed to be like that, like custard?? The batter was quite runny. I guess if thats how its supposed to turn out, then they were pretty good. I did cut the sugar down to only 1.5 cups, was just about the right sweetness. And I used almond extract.

Quick and Easy Yorkshire Pudding

As some suggested, I put a pinch of salt into the batter. Still needs a little something to it if eating it by itself. But would definitely be better with drippings. I gave this a 4 because it was quick and easy as name implies.

Easy Chicken Tetrazzini

I made a few minor changes, used 1 can of cream of mushroom, 1 can of cream of chicken. Instead of using water and bouillon cubes, I used 2 cups (1 can) of chicken broth + 1/4 cup water. Instead of cheddar cheese on top, I mixed some bread crumbs with parmesan cheese to sprinkle on top. Good and easy, will definitely make this again.

Easy Biscuits

These were just ok. I thought they were kind of dry. They came out a bit crispy, after 15 mins they were looking too brown so I had to turn it down to 400 for the last few mins.

Peanut Butter Chili

I didn't like this at all. I tried to like it, but I didn't like the texture of the peanut butter in the chili, its hard to describe the texture. Trying to overlook the texture, there seemed to be no real taste to this at all.

Raspberry Oatmeal Bars

This was good and extremely easy! I used the ingredients but changed the procedure a bit. The jam & water I heated in the microwave for about 10-15 seconds, to make it more easy to spread. And instead of a 9x13 pan, because I thought that was too big and it would be too thin a bar, I used an 8x11 pan..which made it the perfect thickness for me. And I baked it for about 30 mins. Definitely let it cool to set before cutting.

French Quarter Bread Pudding

This was good. Only thing I did different was used less pecans and more raisins because I like raisins more. I think if I make this again I would follow a suggestion to soak the bread longer, maybe in a big bowl or something to be able to stir it and get it more evenly soaked.
