Danish Pastry Apple Bars II

Reviewed: Dec. 2, 2009
I made this a few weeks go but just getting to review. This was pretty good. Basically an apple pie in a bar form. I liked that because it serves more than a basic pie would. Maybe next time though I'll use my own apple filling recipe using this concept.

Cranberry Swirl Coffee Cake

Reviewed: Nov. 29, 2009
This was pretty good. I even used fat free sour cream. I read some reviews, and after making the batter, decided there wasn't enough to go around in a bundt pan, so I used a loaf pan, and it came out perfectly moist. And then I made a glaze to put over it. I didn't really measure, but it was about 1/2 cup powdered sugar, milk and almond extract.

Tia and David's Deep Fried Tortellini

Reviewed: Nov. 27, 2009
I'm rating this based on some changes. Instead of tortellinis I used both cheese and beef raviolis. Omitted the cornflakes, using just Italian bread crumbs. I didn't measure the bread crumbs I just poured as much as I needed as I went along coating the raviolis. Was a hit on a work potluck. Served it with a jarred pasta sauce.

Cheesy Beans and Rice

Reviewed: Nov. 20, 2009
This was just ok. I think it might have been better if everything was all mixed together before baking, plus a little bit more salt.

Easy Coq Au Vin

Reviewed: Nov. 20, 2009
Nothing to rave about. I've never had coq au vin before so I thought I'd give this easy one a try. Only thing I did different was used chicken thighs instead of a whole cut up chicken. It lacks something, maybe more salt or something. Not sure if I would try this again.

Cheddar Beer Triangles

Reviewed: Oct. 29, 2009
This was ok. I don't drink beer and used leftover beer from when a friend visited. Used an amber ale. The taste of beer wasn't real strong so it was ok. I think if I were to make this again, I would add more cheese. Since I don't drink beer I didn't think it would be fair to rate it a 3, so I gave it a 4 since it was ok and real easy to make.

Chuck's Favorite Mac and Cheese

Reviewed: Oct. 22, 2009
This is a change on rating from a 4 to 5 star. This is now my go to recipe. I keep trying other recipes but they don't compare. Everyone who tries this, loves it. Only thing I do different is I do not do the crumb topping (I tried it the first time and it comes out oily), and most the time I add in some bacon. I make this almost every week.

Asian Carryout Noodles

Reviewed: Oct. 7, 2009
This was just ok. But I admit, I did make a couple of changes, I omitted the chicken and added more bok choy. This was "sweet", I expected the salty taste. If I make this again I might add a little bit more soy sauce and less hoisin sauce.

Mac and Cheese II

Reviewed: Oct. 5, 2009
This was just ok. I've had better. The cheese was a thick consistency after baked. I think this could've used maybe a little salt too.

Slow Cooker Macaroni and Cheese I

Reviewed: Oct. 4, 2009
I tried this some time ago and never reviewed this. Did not like this at all. was gritty tasting and it was one crockpot full of mushy macaroni.

Excellent and Healthy Cornbread

Reviewed: Oct. 1, 2009
Did I do something wrong? Only thing I did different was I put this in a round pie pan. This was extremely dense and tasteless. Adding butter or honey would not do it any good.

Chewy Crispy Coconut Cookies

Reviewed: Sep. 20, 2009
Yummy. Instead of dropping by teaspoon, I made mine about a large tablespoon size, baked 10-11 mins. Makes about 3 dozen. I think teaspoon size of dough would be very very small cookies.

Macaroni and Cheese V

Reviewed: Sep. 13, 2009
This was pretty good. I made some minor changes. I used 9oz of shells pasta, used 1% milk. Recipe says salt/pepper to taste, i used about 1/4 tsp pepper and 1/2 tsp salt. For the topping, I just sprinkled on the bread crumbs without the butter. Will be making this again.

Quick and Easy 20-Minute Chicken Posole

Reviewed: Aug. 15, 2009
This is the first time I've ever had, let alone made posole, so I have nothing to compare it to. But it was really good. Only thing I did different was used chicken thighs and browned on both sides after the onions cooked for a few mins before adding the rest of the ingredients. I omitted the olives. Will be making this again.

Mayonnaise Biscuits

Reviewed: Aug. 2, 2009
Wow, that was easy. Its the middle of the night and I wanted biscuits to have with my brisket & gravy that I had made earlier and put away. Wanted an easy recipe, and this could not be easier...I had to take the gravy out and dip one of the biscuits. Will definitely make this again. (I used fat free mayonnaise)

this was pretty good. Was very moist. Instead of using regular shortening, I used the butter flavored shortening.

Mom's Macaroni and Cheese

Reviewed: Jul. 31, 2009
This was good, but I've had better. I did make a couple of changes though. I had 4 oz of Velveeta left so I used that and lowered the cheddar cheese to about 3/4 cup. If I make this again, I would probably use the same ratio, and increase the amount of macaroni to 2 cups like some readers suggested.

Iced Pumpkin Cookies

Reviewed: Jul. 25, 2009
These weren't spectacular, but were good enough for a 4 star. Only thing I did different was used only 1/4 tsp cloves, because I thought with 1/2 tsp the clove flavor would be too overpowering.

Southern Peach Cobbler

Reviewed: May 25, 2009
Other than using just about half the syrup, I followed the recipe to a 't'. After the baking time there was this big puddle of liquid in the middle of the dish. I took the dish out and actually poured the liquid (juice or butter?) out. Then baked another 15 mins. When it came out, the center was still all wet and the batter part was never cooked through. Only reason I gave this a 2 star was because the edge of the dish did get cooked thoroughly so I was able to taste that area, and that was ok. I won't be making this again.

Queijadas

Reviewed: May 25, 2009
The insides were still a bit gel-like, but I think they were supposed to be like that, like custard?? The batter was quite runny. I guess if thats how its supposed to turn out, then they were pretty good. I did cut the sugar down to only 1.5 cups, was just about the right sweetness. And I used almond extract.
