Butternut Squash Soup II

This was pretty good for my first attempt at butternut squash soup. It just seems to be missing something though to make it a 5 star.

Plum Custard Kuchen

I thought this was just ok. I just made 1 change, I used almond extract instead of the vanilla. Everyone else seemed to like it a lot, so I gave it the 4 stars.

Cinnamon Graham Crunchy Cookies

I really wanted to give this a 3 star, but I didn't think it was fair since I didn't add a few things. I just made a "plain" cookie, did not add the chocolate chips or the nuts. I thought they were just ok, but everyone else just raved about them.

Absolute Mexican Cornbread

4 star based on my changes. After reading some of the reviews first, I also decreased the butter to 1/2 cup, and sugar to 1/2 cup. It could be just a little sweeter, so maybe next time put more sugar.

Amazing Coconut Pie

Merenges

I hate to give this a bad review, but sorry, this was not good at all. I don't know if it was because of the one little change I made. Instead of the lemon zest I put in about 1/4 tsp lemon extract. To make 50, they came out really small, after 35 mins they were really browned and overall just didn't taste good.

Pesto Chicken

I used bacon instead of prosciutto. Turned out pretty good. The chicken breasts were pretty thick, next time I might flatten them out or butterfly them.

Best Steak Marinade in Existence

This review is based on my changes. Was quick and easy and pretty good. I used low sodium soy sauce, added a couple dashes of liquid smoke, and left out the lemon juice. If I were to make this again though, I think I would use a little bit less of the dried basil. Maybe just 2 tbs.

Chocolate Truffle Pie

One review used an oreo crust so I did that too. I also used chocolate chips instead of squares, and baked for 30 mins. Rich and yummy. Will definitely be making this again.

Stephan's Broiled Salmon Pesto

This review is based on my changes/omissions. I omitted the lemon juice and wine. So basically it was pesto over salmon. Easy and good. I did take someone's suggestion and I baked at 375 for a few mins before broiling.

Cornbread Muffins I

These were pretty good. I read some reviews and decreased the sugar to 1/2 cup. And I didn't read the directions carefully and didn't thaw out the corn, still came out good. Will be making this again.

Basil and Prosciutto-Wrapped Halibut

Ok, my review is on one change. Instead of fresh basil, I sprinkled on dried basil. This was real simple, but I thought this was just ok, nothing special. A bit salty for me I think due to the combo of the prosciutto and adobo seasoning. If I make this again I would probably lower the amount of the adobo seasoning.

Portuguese Custard Tarts - Pasteis de Nata

Simple, easy, and very good. I have a slightly different version of this, instead of a vanilla bean, I put a cinnamon stick into the milk mixture, and then at the end poured in 1/2 tsp vanilla. Will definitely be making this again.

Tres Leches (Milk Cake)

This was the first time I've ever made this type of cake. Turned out pretty good, with minor changes. After mixing the milks together, I thought wow, there's more milk than cake. It seemed a ridiculous amount. So I only spooned on probably about 1/4 of what the whole recipe called for, just enough to moisten through the whole cake. I jarred the rest of the milk mixture to make another one in the next day or so. And I cheated on the topping. I just used cool whip.

Mexican Rice II

This was just ok. Found it a little too salty. I would suggest lowering the amount of salt, or lowering the amount of broth and substitute with water. Not sure if I would make this again.

Crustless Spinach Quiche

Simple and good. I'm trying to go low carb and this is perfect for it. I did make some changes though. I used about 2 cups muenster, 1/2 cup mozz and 1/2 cup cheddar. Used 6 eggs, 5 didn't look like enough, and added an extra pinch of salt because of the extra egg. Baked about 33 mins.

Hash Brown Casserole II

Easy and good. I only made a couple of minor changes. I used a package of potatoes o'brien (hash browns with the peppers/onions), only used 1/4 cup butter, and did not do the cereal/butter topping. My potatoes weren't completely thawed so I baked mine for about 50 mins.
