Pesto Chicken

I used bacon instead of prosciutto. Turned out pretty good. The chicken breasts were pretty thick, next time I might flatten them out or butterfly them.

Best Steak Marinade in Existence

This review is based on my changes. Was quick and easy and pretty good. I used low sodium soy sauce, added a couple dashes of liquid smoke, and left out the lemon juice. If I were to make this again though, I think I would use a little bit less of the dried basil. Maybe just 2 tbs.

Chocolate Truffle Pie

One review used an oreo crust so I did that too. I also used chocolate chips instead of squares, and baked for 30 mins. Rich and yummy. Will definitely be making this again.

Stephan's Broiled Salmon Pesto

This review is based on my changes/omissions. I omitted the lemon juice and wine. So basically it was pesto over salmon. Easy and good. I did take someone's suggestion and I baked at 375 for a few mins before broiling.

Cornbread Muffins I

These were pretty good. I read some reviews and decreased the sugar to 1/2 cup. And I didn't read the directions carefully and didn't thaw out the corn, still came out good. Will be making this again.

Basil and Prosciutto-Wrapped Halibut

Ok, my review is on one change. Instead of fresh basil, I sprinkled on dried basil. This was real simple, but I thought this was just ok, nothing special. A bit salty for me I think due to the combo of the prosciutto and adobo seasoning. If I make this again I would probably lower the amount of the adobo seasoning.

Portuguese Custard Tarts - Pasteis de Nata

Simple, easy, and very good. I have a slightly different version of this, instead of a vanilla bean, I put a cinnamon stick into the milk mixture, and then at the end poured in 1/2 tsp vanilla. Will definitely be making this again.

Tres Leches (Milk Cake)

This was the first time I've ever made this type of cake. Turned out pretty good, with minor changes. After mixing the milks together, I thought wow, there's more milk than cake. It seemed a ridiculous amount. So I only spooned on probably about 1/4 of what the whole recipe called for, just enough to moisten through the whole cake. I jarred the rest of the milk mixture to make another one in the next day or so. And I cheated on the topping. I just used cool whip.

Mexican Rice II

This was just ok. Found it a little too salty. I would suggest lowering the amount of salt, or lowering the amount of broth and substitute with water. Not sure if I would make this again.

Crustless Spinach Quiche

Simple and good. I'm trying to go low carb and this is perfect for it. I did make some changes though. I used about 2 cups muenster, 1/2 cup mozz and 1/2 cup cheddar. Used 6 eggs, 5 didn't look like enough, and added an extra pinch of salt because of the extra egg. Baked about 33 mins.

Hash Brown Casserole II

Easy and good. I only made a couple of minor changes. I used a package of potatoes o'brien (hash browns with the peppers/onions), only used 1/4 cup butter, and did not do the cereal/butter topping. My potatoes weren't completely thawed so I baked mine for about 50 mins.

Three Bean Casserole

I'll give this a 4 star based on potential, plus I made a few minor changes. I did not use frankfurters, instead I add a can of cannellini beans. Directions weren't too clear, so I drained and rinsed all the beans (except for the pork and beans). I only used about 1.5 tbs of vinegar. I think next time I make this I might throw on a couple of strips of bacon on top or chop them into the mixture, and maybe a little bit more brown sugar for more sweetness.

Incredibly Cheesy Turkey Meatloaf

I wish I could give this a higher rating. Although it wasn't bad, it wasn't all that good either. Only difference was, instead of plain ketchup on top, I used a ketchup, mustard, brown sugar mixture. that made it a bit better. I doubt I will be making this again.

Bar-B-Que Sauce

I only came out with about 1/4 cup of this sauce, I simmered for about 10 minutes, was that too long? Well, however much it was supposed to be, it turned out pretty good with a couple of changes. After reading some of the reviews, I only used 1/2 tbs of cider vinegar and added in about 1 tsp of honey. Will make this again, but will definitely have to double (or even quadruple) the recipe.

Scalloped Corn

I guess this was ok. It wouldn't be fair to down grade to a 3 because I didn't like the "texture" of it. The taste was fine. I read some of the reviews and I did cut the sugar down to 1 tsp. And then baked in a 2 qt casserole dish, bake time about 50-55 mins.

Delicious Raspberry Oatmeal Cookie Bars

Quick and easy. I didn't realize I didn't have any raspberry jam, all I had was strawberry preserves, so I used that instead. I was actually glad, it turned out sweet, where the raspberry would have been some what tart. Will be making again.

Favorite Old Fashioned Gingerbread

I should have read some of the reviews first before making this. Although it wasn't too strong, the molasses was a little bit overpowering. Maybe if I make this again, I would cut it down to maybe 1/2 - 3/4 cup molasses. I cut the cloves down to just under 1/4 tsp, because I don't like a strong clove taste. I baked this in an 8x11 pan. It still came out pretty thick, I think the 9x9 it would nearly overflow? In the 8x11 pan it took about 35 mins to bake.
