Plum Blueberry Upside Down Cake

Reviewed: Jul. 6, 2011
This was pretty good. Mine was tart, but only because my plums were a bit tart. Otherwise unlike some reviewers, my cake came out perfect, I baked for the 40 mins, turned the oven off and left it in the oven for about 3 mins. The recipe doesn't say to do this, but seeing as how its an upside down cake, I turned it over onto a plate soon after taking the cake out of the oven. The only revision I did to the recipe was that I used all plums, and used almond extract instead. Will make this again.

Taco Pie

Reviewed: Jun. 29, 2011
This could be better with some changes. 16oz of sour cream just seemed too much, so I only used half. even with half, it was way too much. The creaminess of the sour cream took over the pie. A whole bag of tortilla chips also seemed way too much, so I just crushed enough to cover the top. If I ever make this again, I would use this as a base and make more changes. Less sour cream (or none at all), less tortilla chips....and after reading other reviews, maybe add in corn and some tomatoes.

Broccoli Rice Casserole

Reviewed: Jun. 29, 2011
This rating is based on a few changes. I used shredded cheddar cheese as one reviewer suggested. And because I wasn't paying attention, I accidentally used a can of cream of celery soup instead of the chicken. I used 2 cups of rice and added in some shredded chicken. With these changes, I would probably make again.

Strawberry/Rhubarb Crumb Pie

Reviewed: Jun. 14, 2011
This rating is based on a couple of changes. I used cornstarch instead of flour and omitted the vanilla. Came out perfect. Definitely need to let it set/cool before cutting into.

Strawberries with Balsamic Vinegar

Reviewed: Jun. 10, 2011
I have to admit that this rating is based on some changes. I only used about 2.5 tbs of sugar, and I used only 1 tbs of strawberry balsamic vinegar.

Artichoke Chicken

Reviewed: May 30, 2011
4 star for potential. Only thing I did different was I used a little garlic powder instead of the garlic pepper. Still needs a little something, maybe season the chicken with a little salt first? And the topping was a little bit too creamy for me, if I make this next time, might try to lower the mayo down to 1/2 cup.

Simply Parmesan Chicken

Reviewed: May 29, 2011
I didn't find this to be of anything special. Only difference is, I used shreddeded Parmesan instead of grated because I didn't have any. Not sure if that makes a big difference or not. Needed a little bit more of something. Maybe salt the chicken a little bit first. And I used a little cooking spray on the pan. Not sure if I want to try this again or not.

Creamy Caramel Flan

Reviewed: May 7, 2011
Easy. Everyone at work loved it. I did follow a reviewers suggestion, I cut the cream cheese to only 1/2 the package. Will make again.

Sopapilla Cheesecake Pie

Reviewed: May 7, 2011
Brought this in to work for Cinco de Mayo. I didn't have any, but from what I hear it was the best ever. To the point, where some took more than their share and some didn't get a chance to sample it at all. I did follow a few reviewers suggestions, I cut the sugar down to 3/4 cup, and I used 2.5 packs of cream cheese (because I had 1/2 pack leftover and didn't want it to go to waste). And I did not use the honey. This is definitely a keeper and will be making it again.

Chinese Steamed Buns

Reviewed: May 3, 2011
The dough tasted kind of weird. After reading some reviews I did make a couple of changes, I had to add about a tad bit over 1/4 cup flour to the dough. I thought 2.5-3 hrs rise time was way too much and saw that someone suggested 1.5 hrs. My first rise I did for just over 1.5 hrs, rose very well, but also deflated very well after touching it. I thought breaking the dough down to 24 was way too small, I only got 12. The 2nd rise was 30 mins, and they were decently sized....but again, as soon as I touched it, they deflated a little...and never rose again during the steaming. The recipe is simple, but yet it takes so long. I'm not sure I would try this again.

Sam's Famous Carrot Cake

Reviewed: Apr. 24, 2011
This was just ok, wasn't the best, needed a little more something, maybe some nutmeg and cloves. Baked it in a 9x13, 8x12 just seemed too small. Baked for 45 mins.

Super Easy Artichoke Dip

Reviewed: Apr. 23, 2011
This was pretty good. I didn't measure the mozzarrella, I probably put at least 1.5 cups. With that said, this tastes good, but its too "cheesy/stringy" to be a dip. I used fresh mozzarrella, so not sure if that might be the problem. And I like garlic, but I think 2 cloves was too much, maybe 1 next time?

Sweet Dinner Rolls

Reviewed: Apr. 23, 2011
These are the best rolls I've made so far. I used my stand mixer to knead the dough and let rise an hour. Only others changes I made were I used soy milk, and made these into rolls instead of crescents, and brushed on butter on the top before the 2nd rise. Will definitely make this again.

Chocolate Eclair Cake

Reviewed: Apr. 17, 2011
I didn't have any of this but those who did loved it. So easy too. However, reading some of the reviews I made a couple of changes. I used only 3 1/2 cups milk, and only an 8 oz tub of Cool Whip. And for the frosting, I made a chocolate ganache. Will definitely make this again.

Chinese Cocktail Buns

Reviewed: Apr. 17, 2011
This is a revision of my original review... torn now between 3 and 4 star (original was 4 star), but will give 4 star for benefit of the doubt. The buns were hard after sitting for several hours. This time though the dough did not deflate when I put on the egg wash. Anyone else have problems with the filling? Mine comes out still all crumbly and flaky. The recipe shows says makes 32 buns, but the recipe says it makes 16? I made 16, and I think there was so much of the filling that there was at least 1/4 cup of filling (if not more) in each, and still had a little left over. This was my 2nd attempt at this recipe. Although I gave it 4 star (for benefit of the doubt), I don't know if I would make this again.

Challah I

Reviewed: Apr. 14, 2011
I'll give this a 4 star only because the bread itself was pretty good. I halved the recipe, the dough was extremely sticky, I probably added in an extra 1/2+cup of flour, still a bit sticky but was afraid to put in more. My bread didn't come out braided. As it was doing the 2nd rise, it pretty much melded back together and I basically ended up with what looked like a loaf of french bread. I might try again.

Basic British Scones

Reviewed: Apr. 7, 2011
These were just ok. But I don't know if this would be a fair review or not because this is on my change. I used soy milk instead of regular milk. Other recipes I've made such substitutions have been fine, so not sure if it made a difference here.

Simple Roasted Chickpea Snack

Reviewed: Mar. 15, 2011
the way mine turned out should be 3 star, but that was really my own fault. I read some of the reviews first and I turned the oven up to 400, baked for 40 mins, turned oven off, then left it sitting in the oven for 5 mins. For the ones that didn't get too crisped up, they were good in taste. I am giving this a 4 star, for when I make this again, and maybe only bake for 30 mins.
