Easy Cheese Ball II

So easy and so good. I've made this a couple times now. I only use 2 cups of cheese (because I buy the pre shredded and they come in pkgs of 2 cups). This is a good base for additional add ons. I've also made it with bacon and green onions. I've also used a Mexican style cheese. This is definitely a keeper.

Jalapeno Snacks

big hit with everyone. first time i made as is. 2nd time, I got lazy and I put bacon bits in the cream cheese mixture. I was told that it was good both ways. Definitely will be making it again

Bacon and Tomato Cups

After reading reviews, I did this a couple different ways with the biscuits...but first off for the filling. I used what I had on hand. I used 2 roma tomatoes, 1/3 cup bacon bits, cheddar cheese, and only 1/3 cup mayo. For the biscuits, I tried a few cut in half, some in 1/3 and some in 1/4. If you are going to use 1/2 a biscuit, I suggest you use a regular sized muffin pan, NOT a mini pan. If you cut the biscuit in 1/3 or 1/4, than go ahead and use the mini pan. Don't forget, the biscuits will rise! I like the 1/4 size. they are the perfect size for an appetizer/finger food. the 1/3 size is not too much bigger but not as "cute" as an appetizer. The 1/2 biscuit is more like an after school snack size, or alongside dinner. Will be making this again.

Spinach Rice

This was ok. I had leftover cooked rice so I used 2 cups of that. Even so, there was too much spinach for this recipe. Maybe half? And I don't think the processed cheese did anything for this recipe. If using, make sure to stir it about half way thru baking. If I were to make this recipe again I would leave it out.

Bar Cookies from Cake Mix

I would've given this maybe a 2.5 star. It tasted too much like cake mix to me. I think the effort it took to make this, I would just rather make it from scratch.

Orange Pumpkin Loaf

I'm giving this a 4 star because my friends liked it. I thought it was just ok. Needs to bake for at least 1 hr 15 mins. I took it out at 1 hr, I tested it and it seemed ok. But by the time it cooled and I cut into it, the center section of the loaf was not done. I had to cut out a good portion to be edible.

Sweet Restaurant Slaw

I'm not a coleslaw fan, but I thought I would try this with some pulled pork sandwiches we were having. The only difference is I used mayonnaise because I didn't have any Miracle Whip, and I omitted the poppy seeds. Yum!

Mom's Country Gravy

Campbell's Kitchen Baked Corn Casserole

did not like this at all. Only thing I did different was, I did not use the fried onions. And I baked this in a 2 qt round dish, took an 45mins-1 hr to bake. Maybe if it was put in a 9x13 pan it would only be 30 mins. Either way, will not make this again.

Tartar Sauce I

ok, I didn't realize how easy tartar sauce is to make... the only change I made was, like a couple of reviewers, I put in a touch of onion powder instead of onions (because I was too lazy to chop). I just a couple of drops of lemon juice. Will make this again, the only thing different I think I will do next time is add a little bit more relish.

Streusel Topped Blueberry Muffins

I was surprised how good this was...I wasn't hungry but I wanted to try it after it cooled...I ended up eating about 3/4 of the muffin. Oh, I made the giant muffins! So I only made 6, and baked for about 31 minutes. And the only other thing different was I used 2 cups of frozen (thawed) blueberries. I will defintely make this again, and maybe add in a little bit more blueberries.

Chef John's Buttermilk Biscuits

I did as some others, I put the flour mixture and butter in a food processor first, then the buttermilk in there to combine. And then patted together into a rectangle. Instead of cutting into 12 round biscuits, I made 10 square"ish" biscuits. Baked for 16 minutes. Will make this again.

"Pantry Raid" Chicken Enchilada Casserole

I have to admit that this review is based on a few minor changes. I did not add cream cheese because I'm not a cream cheese fan. I don't know how much chicken I used because I used some leftover baked chicken. Then I tossed in about half a can of mexi-corn. I used a 9x7 pan and that seemed to be a good size pan for this. Will make this again.

Fresh Southern Peach Cobbler

Finally, a cobbler that I didn't end up throwing away after baking. However, I did make some changes after reading some reviews. First I used canned peaches, 1 large and 1 small, drained/liquid saved. And I only used about 1/8 cup of sugar in the peaches. For the topping, instead of water, I used the saved liquid from the canned peaches. For the cinnamon/sugar mix,I used only about 3/4 of it. the whole thing just seemed to be too much, and after tasting the cobbler, 3/4 of it was just plenty. However, it does come out burnt looking. Maybe next time (because I will definitely make this again) will sprinkle on during the last 10 mins of baking, so it won't be so dark looking.

Sesame Beef

This was pretty good, I did make a couple minor alterations. I used sirloin, because thats what I had and i wanted to use it up. I had 1.5 pounds of it, so I 1.5x the recipe (using 4 tbs regular soy sauce and 2 tbs low sodium). Marinated it overnight with half a yellow onion (I forgot to get green onion). Then when cooking it, when it was mostly done, I threw in a bag of frozen stir fry vegetables. And I guess I can't really call this sesame beef, because I didn't want to put any sesame on it. Will be making this again.

Green Chile and Rice Casserole

Ok, so I admit I made a few minor changes... so this was just ok. I couldn't find any 6 oz boxes of rice, only 4 oz. And reading some of the reviews, I only used 8 oz bag of cheese (16 does sound way too much), and partially drained the chiles. And I had some leftover rotisserie chicken so I shredded some chicken onto the first layer. I don't know if I would make this again, seemed to be a lot of work for a simple dish (having to take 20-25 mins making the boxed rice first-mine took about 35 to cook). Don't know if I would make this again.

Chef John's Flour Tortillas

I literally just finished making a batch. Wow, I didn't realize how easy it is to make home make these, and good too. Only thing I did different was cook these on a medium-low heat, my first one got a little brown on medium-high, it just takes a few seconds longer on medium-low. Will definitely make these again.

Kentucky Butter Cake

This was really good. I do have to admit I made a minor change. First, I did like some others, I creamed the butter and sugar first before adding the other ingredients. And instead of vanilla in the batter, I used 1.5 tsp almond extract, but used the vanilla in the sauce. And I only made half the sauce, which was perfect. However, I think next time I will make the full recipe of sauce, and once I turn the cake over, will pour some on the other side. My sauce didn't soak thru, so only the "bottom" had the sauce.

Spaghetti Carbonara II

This was pretty simple and good. But I have to admit I read some reviews and made some minor changes. I didn't want to make the full recipe so I "halved" it...that said, I used 3 eggs and 1/3 cup of parmesan, plus the full amount of bacon. I also mixed the eggs and cheese together before pouring it over the pasta (I used angel hair). Will make this again.
