Fresh Southern Peach Cobbler

Finally, a cobbler that I didn't end up throwing away after baking. However, I did make some changes after reading some reviews. First I used canned peaches, 1 large and 1 small, drained/liquid saved. And I only used about 1/8 cup of sugar in the peaches. For the topping, instead of water, I used the saved liquid from the canned peaches. For the cinnamon/sugar mix,I used only about 3/4 of it. the whole thing just seemed to be too much, and after tasting the cobbler, 3/4 of it was just plenty. However, it does come out burnt looking. Maybe next time (because I will definitely make this again) will sprinkle on during the last 10 mins of baking, so it won't be so dark looking.

Sesame Beef

This was pretty good, I did make a couple minor alterations. I used sirloin, because thats what I had and i wanted to use it up. I had 1.5 pounds of it, so I 1.5x the recipe (using 4 tbs regular soy sauce and 2 tbs low sodium). Marinated it overnight with half a yellow onion (I forgot to get green onion). Then when cooking it, when it was mostly done, I threw in a bag of frozen stir fry vegetables. And I guess I can't really call this sesame beef, because I didn't want to put any sesame on it. Will be making this again.

Green Chile and Rice Casserole

Ok, so I admit I made a few minor changes... so this was just ok. I couldn't find any 6 oz boxes of rice, only 4 oz. And reading some of the reviews, I only used 8 oz bag of cheese (16 does sound way too much), and partially drained the chiles. And I had some leftover rotisserie chicken so I shredded some chicken onto the first layer. I don't know if I would make this again, seemed to be a lot of work for a simple dish (having to take 20-25 mins making the boxed rice first-mine took about 35 to cook). Don't know if I would make this again.

Chef John's Flour Tortillas

I literally just finished making a batch. Wow, I didn't realize how easy it is to make home make these, and good too. Only thing I did different was cook these on a medium-low heat, my first one got a little brown on medium-high, it just takes a few seconds longer on medium-low. Will definitely make these again.

Kentucky Butter Cake

This was really good. I do have to admit I made a minor change. First, I did like some others, I creamed the butter and sugar first before adding the other ingredients. And instead of vanilla in the batter, I used 1.5 tsp almond extract, but used the vanilla in the sauce. And I only made half the sauce, which was perfect. However, I think next time I will make the full recipe of sauce, and once I turn the cake over, will pour some on the other side. My sauce didn't soak thru, so only the "bottom" had the sauce.

Spaghetti Carbonara II

This was pretty simple and good. But I have to admit I read some reviews and made some minor changes. I didn't want to make the full recipe so I "halved" it...that said, I used 3 eggs and 1/3 cup of parmesan, plus the full amount of bacon. I also mixed the eggs and cheese together before pouring it over the pasta (I used angel hair). Will make this again.

Spinach and Potato Frittata

This was just ok. My stove must run high. After a couple mins on medium heat some of my potatoes were burnt, so I had to turn it to a medium low. As others stated, this will not be done in 5-7 mins, especially not on low. I had turned the oven to 350 to preheat, and the eggs were not done by that time. I put the skillet into the oven and baked it for about 18 mins, perfect. Not sure if I would make this one in particular again, but it is a good starting base.

Playgroup Granola Bars

Ok, I'm giving this a 4star because I made some changes and didn't think it would be fair to down a star on it. I only used 1/2 cup sugar (as I had read some reviews) and I thought 2 tsp vanilla was too much so I only used 1. And I added in about 1/4 cup of sunflower seeds. Then I baked this in a 8x11 pan,which I think was the perfect thickness. And baked for 30 mins. They came out to be a good chewiness for me. Will give this a try again, and probably use the full amount of sugar and a tad bit more of cinnamon.

Tater Tot Bake

I used to make something similar to this using a cream of chicken and hash brown potatoes (the diced kind). This is pretty good too with the cream of mushroom (and I don't like mushrooms). Only thing different is that I also tosssed in a can of corn on top of the ground beef. They have all sorts of creamed soups out there with herbs and garlic, might try one of those next time.

Baked Beans II

I halved the recipe, and I didn't put any onions in it.. as some reviewers did, I used apple cider vinegar. I thought it was a little too tart, maybe less mustard? This has potential with a little more work.

Scones

I've been using a different scone recipe on this site, but several weeks ago I decided to try this one.. I've made this about 5 times now! One batch I added in cheddar and bacon..yummmm! This is my now go to recipe, as is, and as a base to add in. Only thing I suggest, is for a savory scone such as the cheddar and bacon, is to decrease the sugar a little bit.

Guacamole

This rating is based on my taste testers...(I don't eat guacamole). My BF just loves and raved about this, he didn't think it could be so easy, its so easy enough that he makes it own his own now. Only suggestion is to just start with about 1/4 tsp salt and then adjust accordingly.

Grandma's Egg Custard Pie

I give this 4 star for potential. I read some of the reviews and cut the sugar down to 2/3 cup which still seemed a tad sweet, added an extra egg, and used almond extract instead of vanilla (I used 1tsp but it was kind of strong so maybe next time 1/2 tsp just for the hint of it). I did not brush the egg white onto the crust. This took about 45 mins to bake at 375 (probably could've used another 5 mins), but it seemed to set ok after being overnight in the fridge. Will probably make this again with less sugar.

Oven Brown Rice

This is based on my changes. After reading reviews I used low sodium beef broth, only 2 tbs butter (did not melt just threw it in the dish), 1/2 tsp seasoning salt, 1/2 tsp garlic salt 1/2 tsp garlic powder. And this did take 90 mins to bake.

Buttery Corn Bread

This was good but I would've liked a little more corn taste. I saw a review where flour/cornmeal ratio was changed up. Might try this again doing that and maybe substitute some buttermilk for some milk.

Chocolate Pudding Fudge Cake

this was really good. Only a few changes not by choice, the box of cake mix I had was I believe only 16.5 oz, and I didn't have enough sour cream, probably only about 7/8 cup. By choice I omitted the chocolate chips. And instead of using the glaze recipe given here, I made a ganache topping and poured it over the cake. Still very good cake.

Country Pound Cake

This was pretty good, I made a mistake and made a couple changes. My mistake was I put too much milk, I accidentally poured in 2 cups, after stirring for a few seconds, I realized my mistake and had to pour what extra milk I could. The changes were I used 1 tsp almond extract in place of the vanilla and lemon. I poured the batter into a 9x13 and put it into a cold oven. Turned on the oven to 350 and baked for an hour. Even with the error in milk, this came out pretty good, in fact, I'm glad I put in the extra milk. It gave it just the right moistness, wasn't too dense.

I made this as written and its great. It didn't say what milk to use, I used a 2% milk and it still came out creamy. I think next time I might try adding bacon to this.

Baked Homemade Macaroni and Cheese

This was just ok. I think the instructions need to be changed. I thought about changing it, but I did as is, and the sauce came out gritty. I should have followed my instincts and made the sauce like a roux first, which might help the grittiness. Might try it again.
