Cream Puffs

I'm just getting around to reviewing this, made this weeks ago...in fact, made 4 batches! I didn't realize how easy it was to make cream puffs. Only thing I did was for the filling, I halved it, and made 1 batch of chocolate, and 1 batch of vanilla. Will definitely make this again

Rum or Bourbon Balls

Chocolate Applesauce Cake I

This was pretty good, I did however make a few changes. I used unsweetened soymilk instead, and only 1/2 tsp nutmeg. I didn't think there was enough batter for a 9x13 pan, so I used a 7x11 pan and baked for about 50 mins.....in the end I think a 9x13 would've been ok. I also did not use the full 1/4 cup rum at the end, I was taking this to work so I only used about 1/8 cup on top, and then sprinkled it with powdered sugar before serving. Will be making this again.

Portuguese Sweet Bread I

This was pretty good fresh. Was a little dry the day after. I did not use a bread machine. I proofed the yeast in my kitchenaid mixer, and mixed/kneaded in that... then put in warm oven for 1 hr to rise, then put it in a loaf pan, let it rise for another 30 mins, baked at 325 for 35 mins.

Pierogi (Polish Dumplings)

This is more a 3.5, but didn't want to give it the lower 3 stars. THis was my first attempt at making pierogies.. the only difficulty I had was rolling out the dough. As for the filling, I like sauerkraut, but I did not like this filling at all. I ended up tossing it out and using the potato filling. And there was plenty of filling left. I used a piroshky/dumpling crimper to seal. Will make this again.

Cheesy Onion Focaccia

This was good. My only problem was with the dough. I don't have a bread machine and used my kitchenaid, and did not proof the yeast. I think I will do that next time before mixing in everything. Onion mixture was really good. The crust didn't come out "doughy", but more like a crispy pizza crust, which still was good.

Impossible Coconut Pie I

I made several changes, and everyone seemed to like it, so I'll give it a 4 star. I used unsweetened vanilla almond milk. And instead of using vanilla, I used almond extract. Bake time was about 50 mins. I think that it could've gone in for maybe a few more. I will probably do it again and not use almond milk.

Salsa Chicken Rice Casserole

Good and easy. I did take a shortcut though, instead of boiling up some chicken, I used a rotisserie chicken and shredded the chicken. And I did as some reviewers and added in a can of black beans. Will be making this again.

Red and Green Christmas Jalapeno Jelly

I was kind of skeptical of this recipe because of the vinegar... that and I don't like spicy and I'm not a big jelly fan. But this turned out great. It had just the right amount of sweetness with a subtle hint of spiciness. Since I was skeptical I halved the recipe. The jelly came out quite gel'd. Had to heat up in microwave before serving. I will definitely make the full batch the next time, but I still might not add the full of pectin.

Wine Jelly

this was great over cream cheese with crackers. my first batch I didn't read the instructions clearly and did not set. 2nd batch I made sure to read carefully, and it turned out great. Fyi, a 750ml bottle of wine is just under 3.5 cups, so no need to measure out the bottle. I tried it with a cabernet, I think I will try next a merlot and riesling.

Baked Coconut Shrimp

Made this as an appetizer tonight. Was a hit. Just a couple changes, I don't like spicy so I did not use the cayenne, and reading reviews, I used unsweetened coconut. Served with sweet n sour sauce and sweet thai chili sauce.

These were pretty good. Only changes made were I used sugar substitute, and I didn't think there was anyway the batter would stretch into a 9x13 pan, so I used a 7x11 pan, and that was perfect, still baking for only 25 mins.

Parmesan Artichoke Casserole

This was ok. 4 stars for potential. I should have read some of the reviews before making this recipe. I think putting a little more artichoke or maybe spinach would be good. I think I might also try chopping up the artichokes and making this more a dip.

Buttermilk Pie IV

4 star for potential. I should've read some of the reviews first. I thought 2 cups of sugar was too much but went for it anyway. DEFINITELY way too much. I baked as directed and the insides are still a little wet. I cut a piece out already to taste, going to put it back in the oven and hopefully it'll be able to bake up some more. Will probably make this again, but cutting out some of the sugar and maybe do as others, cut down the temperature of the oven and bake a little bit longer.

Italian Confetti Pasta Salad

This rating is based on my changes. First off, I used a 12oz pkg of rotini (4 cups dried). The recipe as is, would be way too creamy if used only 2 cups of dried pasta. Other changes, used dried basil (forgot to buy fresh), omitted olives, omitted yellow pepper, used a combo of red and green ones, added in strips of salami, and diced fresh mozzarrella. I would use this again as a base recipe.

Key Lime Cheesecake I

I didn't have any of this, but everyone who had really liked it. The only thing I did different was add in an extra 4oz of cream cheese because I had it leftover, and did not put in any zest because I forgot to pick up a lime. The center didn't seem to set too well, but good enough. Maybe next time I will let it bake another 5-10 mins before turning the oven off.

Irish Cream Bundt Cake

Easy recipe. Cake was real moist. The only thing I did different was I made only half the glaze...glazed the "bottom" of the cake before turning it over onto a plate, then also glazed the "top". Half the glaze was the perfect amount. Will make this again.
