You only have to cook it to 165 degrees!!!If you cook it to 180 its going to be dried out and tough!!! This is one of the BEST recipes for chicken!! I have been making it for several years and it has the best flavor!! I always cook whole chickens and turkey breast side down as it makes for the moistest breast meat you will ever eat. If you want the breast browned.... flip it over the last 20 minutes or so, so it browns. Thanks for an awesome recipe and I don't have to dirty up my rotisserie as I hate cleaning that thing!
