Oriental Chicken Broccoli

Reviewed: Apr. 25, 2003
Tastes great...I used brocolli,, snow peas, mushrooms and chicken. Be sure not to let simmer too long. Some of the veggies got a little mushy while I waited on my rice.

Linda's Monster Cookies

Reviewed: Jul. 3, 2003
These are some of the best cookies I have ever eaten!!! I read previous reviews and here's how I adjusted mine. Baked at 325 for 13-14 minutes, no burning. Instead of maragine I added an additional 1/2 cup of butter and 1/2 cup of peanut butter. Next time I may change to add a little more peanut butter, because I like the taste of peanut butter, it was not overpowering though. Since I made this for bake sale I used red and blue M&M's for the candy. I also sprinkled red, white and blue sprinkles on top before baking. They looked so festive. BEWARE this recipe makes a ton of cookies I ended up with like 9 dozen, you may want to half the recipe.

Easy Decadent Truffles

Reviewed: Jul. 15, 2003
Ok if I could give this more stars I would. It was so easy and awesome! I melted the chocalote chips in the microwave to make super easy. I made half rolled in powered sugar and half in cocoa powder. The day I made them the ones in powdered sugar tasted better, but they did not look better. The cocoa ones tasted better the next day and looked prettier. I can't wait to make again and experiment. Make sure you do not make too big becuase they are rich. I was even thinking about dipping some in white almond bark. Thank you so much Jenny for the recipe, love it!!

Easy Garlic Chicken

Reviewed: May 5, 2008
Well it only gets a 5 the way I made it... I used olive oil instead of butter. I used plainbeadcrumbs but seasoned with salt & italian seasoning. Awesome I also satueed fresh mushrooms in fat free butterspray with Marsala. Made great leftovers for the Panini machine using Swiss cheese & soft oatmeal bread. Definitely a keeper.

Cottage Cheese Chicken Enchiladas

Reviewed: Apr. 25, 2003
Awesome...I however thought we had cottage cheese in the fridge when I was making this but it wasn't there. So I did not make the name sake I guess. I pored a little enchilada sauce on the bottom to prevent sticking and to keep them rolled. The filling tastes great. Since we did not have the cottage cheese I spread a little sour cream in each enchilada, filled with meat and cheese. I poured on the rest of the enchilada suace on top and then spread the remainder of sour cream and topped with cheese. It came out perfect. My family loved it. Will make again.
