Linda's Monster Cookies

Reviewed: Jul. 3, 2003
These are some of the best cookies I have ever eaten!!! I read previous reviews and here's how I adjusted mine. Baked at 325 for 13-14 minutes, no burning. Instead of maragine I added an additional 1/2 cup of butter and 1/2 cup of peanut butter. Next time I may change to add a little more peanut butter, because I like the taste of peanut butter, it was not overpowering though. Since I made this for bake sale I used red and blue M&M's for the candy. I also sprinkled red, white and blue sprinkles on top before baking. They looked so festive. BEWARE this recipe makes a ton of cookies I ended up with like 9 dozen, you may want to half the recipe.

Poblano Chicken Enchilada Casserole

Reviewed: May 24, 2005
I personally loved it, while once I added some salt and twicked it. I cubed the chicken before cooking and added about 1/4 cup of chopped onion to the chicken mixture. I also diced the tortillas up like I do for King Ranch chicken. I used an additional chicken breast too. I reduced the jalepeno peppers to 2 since they were huge. Used low-fat cheeses, butter and sour cream. My picky brother did not like it. Not for picky eaters. My favorite ingrediants are chicken, mushrooms, pepppers; so I love this recipe. Oh yeah I also changed the cheese to cheddar/monterray jack blend.

Easy Decadent Truffles

Reviewed: Jul. 15, 2003
Ok if I could give this more stars I would. It was so easy and awesome! I melted the chocalote chips in the microwave to make super easy. I made half rolled in powered sugar and half in cocoa powder. The day I made them the ones in powdered sugar tasted better, but they did not look better. The cocoa ones tasted better the next day and looked prettier. I can't wait to make again and experiment. Make sure you do not make too big becuase they are rich. I was even thinking about dipping some in white almond bark. Thank you so much Jenny for the recipe, love it!!

OMG so good. The icing rocks! I didn't realize that until after I iced themmine were still alittle doughy. So remember to check that before you ice so they can be baked longer if needed.

Pretty good...It needed something, maybe a little salt. I think next time I will mix some tomato sauce into the flling or maybe some Ricotta cheese.I would add a little seasoning to the sauce also.

Chocolate Snowdrops

Pretty easy to make. You must refridgrate dough or else you have a huge mess on your hands, Also use Pam or some kind of spray to prevent sticking to hands. I loved the fact that I had all the ingredients on hand too. My 2 year old son helped me make these. He thought he was an awesome baker.
