Grilled Zucchini

My husband tried this recipe when his zucchini patch started to produce great quantities of squash. We wanted something that wasn't pan fried with cheese on top, like we always prepare it. This was fast, easy, healthy, and delicious. He didn't change a thing in the recipe. The flavor complemented the grilled pork we were eating. Since we always have the ingredients on hand, even the fresh rosemary, I saved it to my Recipe Box. We did use a good quality balsamic vinegar to ensure a great flavor.

Delicious Ham and Potato Soup

I made this as close to the original recipe as I could, so that I could review it fairly. I did leave the peel on the potatoes, since they were fresh-dug (and scrubbed!) potatoes that I bought at the Farmers Market just for this recipe. I also briefly used my immersion blender right before serving to get a thicker soup. The soup won raves from all of my family, with instructions to double it next time, since it only made 4 soup bowls of soup. I am planning on adding some parsley, thyme, white wine, and cheese the next time that I make it. This recipe will be a great reason to have leftover ham!

Rosemary Ranch Chicken Kabobs

I made this recipe exactly as written, and served it in to friends along with garden-fresh corn, tomatoes, summer squash, green beans, and cucumbers. This is a wonderful main dish for summertime when main dishes need to be less filling and they take second place to garden fare. The chicken has a wonderful flavor, and the leftovers were great reheated the next day. I'll definitely make it again, and I'll keep the ingredients on hand for future grilling.

Pear and Blue Cheese Salad

I've made this salad seven or eight times and taken it to group dinners. Each time, everyone raves about the flavor combinations and elegance of this salad. The first time that I made it, I didn't have walnut oil. When I made it using the walnut oil, it was superb! My family could tell the difference, so now I keep walnut oil in the fridge just for this salad.
