Bolivian Saltenas

This was really good. My other half who is very picky and hates peas and meat pies loved this! He snuck a second one. :) The only change I made was substituting cayenne and chilli powder for the paprika. We were out so I did 1/2 t cayenne and 1/2 t chilli powder. I didn't use that to add to the egg wash just the filling. thanks for the great recipe!

Chicken Cordon Bleu II

Yum!!!!This was my first attempt at chicken cordon bleu and it won't be my last. I baked the chicken at 350 for 20 mins after dipping in egg wash then the flour/paprika mixture and browning on all sides, like other reviewers suggested. I then whisked all ingredients for the sauce into a pan and simmered it for 10 mins. i tripled the sauce and do have a bit left over which I will add to my alfredo sauce for dinner tomorrow. next time around I'll add more seasonings to the flour. But all in all this is an amazing recipe!!!

Apricot Pork Chops

Delicious! I chopped sweet onion and green bell pepper and added it to the sauce. I also used an egg wash and flour and lightly browned the chops before I put in oven. I served it with veggie fried rice and a pineapple gin and juice made with freshly juiced pineapple and mandarins. YUMMY!

Creamy Chipotle Chicken

This recipe is a keeper! I, like other reviewers have suggested, heated the cream of chicken, and cream cheese in a small sauce pan. I also sauteed about a cup or two of freshly sliced mushrooms to add and threw in 3 or 4 chopped green onions. When the chicken was done we shredded it a little and served it over brown rice. The next night we made spanish rice and made soft tacos with lettuce, tomatoes and the leftover chipolte. YUMMY!! We've made this twice in a span of a month or two and will be making it again soon.
