About this Cook
I'm a mom of a beautiful 7 year old girl, I want to pass along the gift of cooking and baking to my daughter like my mom did for me.
My favorite things to cook
I work full time, so I don't have much time to cook, but my specialty is lasagna or manicotti. Although I'm Irish and Norwegian, but I love cooking Italian.
My favorite family cooking traditions
I fondly remember baking cookies with my mom in our small apartment kitchen listening to the Footloose soundtrack. :) My mom is famous for her Lemon Meringue Pie :)
My cooking triumphs
Banana bread :)
My cooking tragedies
Monkey bread coming out of the oven hard as a rock, I could probably have used it as a weapon.

Seven Minute Frosting I
The absolute best frosting ever! My mom LOVES this frosting, and instead of vanilla extract, I added coconut flavoring, to go with the coconut cupcakes, and it was AMAZING. Can't say enough good things about this recipe :)

Delicious Ham and Potato Soup
This is SUCH a great recipe, very easy to double if you need to make a big pot. Of course, I make a few adjustments like most everyone else does. I use chicken broth instead of water and add the bouillon, no salt, and I add a can of corn. I also find whole milk makes the soup taste so much richer than using 2% or nonfat.

Downeast Maine Pumpkin Bread
Amazing recipe! I double the spices, added vanilla and also doubled the recipe and freeze the 5 loaves until I'm ready to give them as gifts for Christmas. I work at Starbucks and this is better than the pumpkin bread we sell! Thank you for the recipe!
