Best Spanish Rice

I've been making Spanish Rice this way for years--adding some ground cumin makes this five star.

Savory Onion Bread

Oh my goodness---so good and even better the next day. I doubled the onions, added some Italian seasoning, replaced the cheddar that was stirred into the batter with Parm and sprinkled shredded Mozz on the top about 10 min before it was done. It was perfectly done in 20 min. Even better than Red Lobster's Cheddar Bay Biscuits. I will serve this with our Christmas Day Scampi dinner.

Chicken Breasts Pierre

This ones a keeper. 5 stars with my changes. I halved the vinegar, worcesteshire and chili powder. All the flavors blended beautifully. Also used olive oil instead of butter. Next time I think I'll add a little cinnamon and a few raisins and serve with couscous. Thanks for the wonderful recipe.

Pecan-Oatmeal Pancakes

Wonderful jumping off recipe. I made it as written a couple of times with very good results. I've added grated apple, cinnamon, raisins, just about anything you can think of. This morning, being out of milk, I used orange juice and a little orang zest. Fabulous. TFTR

Sausage Meatball Sub

I was looking for a recipe for meatballs using only Italian sausage so I tried this one. Exactly what I was looking for. I didn't make sandwiches with them but put them in a ravioli casserole. They did the trick.

Isaac's Juicy Chicken

This was waaay better than I thought it would be The only change I made was to sprinkle dry ranch dressing mix and garlic salt in with the eggs. The thighs were rather small so took only 45 minutes. Thanks for the recipe.

Savory Apple Pork Chops

Yummy recipe. I followed some reviewers suggestions and made a couple of changes. I browned the pork chops and put them on a bed of thinly sliced onions but otherwise followed the directions. When it was done, I put the juices, apples & onion in a sauce pan and recuced for a few minutes. I will definitly make this again

Cream of Chicken and Gnocchi Soup

Pretty rich but very, very good. I subbed thyme for rosemary (personal preference), omitted the salt and used half butter and half olive oil; otherwise made as directed. DD, who was visiting for the day, said she was glad she stuck around for dinner--high praise indeed. We all agreed it would be just as good without the gnocchi, in fact DH would prefer it that way. Served with the Crazy Bread on this site and Caesar salad. UPDATE...served to a group of friends yesterday for lunch without the gnocchi and it was great. One friend asked if it was an Olive Garden copycat and if so, it was much better.

Copycat Famous Dave's® Drunken Rum Apples

Only made half a recipe. Wish I had made more! Only had regular rum which worked fine. Next time I think I'll peel the apples. I served it along side a breakfast casserole Christmas morning. Everyone loved it.

KISS Salmon

A big FIVE from hubs. He absolutely loved it. I used seedless blackberry jam because I had it and Jack Daniels Original BBQ sauce. 20 minutes at 400 was perfect in my oven. I think you could make this with any jam or preserves you like. In fact the photo looks like the photographer used apricot or peach jam.

Crispy Pork Carnitas

Really, really good. Omitted 5 spice powder (didn't have any) but otherwise made as directed. Next time I'll up the cumin a little and cut back on the salt. Served as soft tacos with corn tortillas, salsa and guacamole. Thanks John for another great recipe.

Chewy Crispy Coconut Cookies

This is just the recipe I've been looking for. I used 1/2t almond extract and 1/2t vanilla instead of the 1t vanilla. And I baked for 9 min in 325 convection oven. These are great!

Mock Tuna Salad

This is great. Trying to get more low fat alternatives into our diet. Used low fat mayo and red instead of green onion. Served open faced on english muffins. I can already see jazzing it up with sliced grapes and some chopped pecans. Thanks for the recipe. Oh...the food processor made quick work of the recipe.

Hawaiian-Style Chili

I've never rated a recipe before officially serving it but I will give it 5 stars because hubby has been sneaking small bowls of it out of the crockpot all afternoon. Fortunately there is enough left for dinner. I had a little taste too and really like it. I followed directions except reduced onions and omitted chili pepper and salt as I used pinto beans in chili sauce that is plenty spicy for us. Finished it up in the crock pot because we like the onions and bell peppers pretty soft in our chili. Also used crushed pineapple with the juice. I think this is our new favorite chile. Thanks. UPDATE: I've made this several times since I rated it the first time and we still love it. Last night I maded it with no ground beef and it was still great. I did double the amount of beans to take the place of the beef. Love it, love it, love it.

Chutney Chicken Salad

I'd give this 10 stars if I couold. Wonderful meal for a very hot evening. I substituted lemon juice for lime and added celery, seedless grapes, and sprinkled on chopped chopped cashews just before serving. DH who HATES curry gives it 4.5 stars which is really saying something. Thanks for the great recipe.

Chicken Little Cinnamon Rolls

My first "first to reiew"! These are your typical cinnamon rolls made with frozen bread dough but the lemon glase makes them great. The only changes I made were to add the zest of one lemon to the glaze and I baked them in a muffin tin sprayed with butter flavored cooking spray. In this pan they only took 17 minutes. I think next time I'll double the glaze since we are real lemon lovers around here. Thanks for the nice twist on an old favorite.

Yankee Salad

I sent this with DH today for a company picnic and he came home with requests for copies of the recipe, so I guess it was a hit. I made only half a recipe, which was plenty and replaced the cherries with strawberries. I will make it again for our annual Memorial Day BBQ and add more fruit. Thanks for the great recipe.
