Irish Soda Bread I

Not really Irish Soda Bread but very good and easy. I used low fat sour cream and it came out just great.

Easy Mushroom Rice

Very easy and very tasty. I used low sodium chicken broth (since it was being served with chicken) and did not add any butter or margarine at all. It was done in exactly 1 hour as the recipe states. Will surely make this again.

Elaine's Peanut Butter Cookies

What great cookies. Very easy and delicious. I added an extra half cup of peanut butter but it still wasn't peanutty enough for me. I'll try more next time. Thanks for the great recipe.

Quick Clam Chowder

Savory Apple Pork Chops

Yummy recipe. I followed some reviewers suggestions and made a couple of changes. I browned the pork chops and put them on a bed of thinly sliced onions but otherwise followed the directions. When it was done, I put the juices, apples & onion in a sauce pan and recuced for a few minutes. I will definitly make this again

Cashew Crusted Chicken

Company good! I followed the recipe exactly making sure I chopped the cashews very fine. I baked it on a broiler pan as someone suggested but it still came out rather gooey on the bottom. Next time I won't waste the cashews on the bottom and I'll add a little more curry seasoning. Otherwise--yum, yum!

Chicken Enchiladas II

This is the best recipe I've found on this site. I took the advice of previous reviewers and used corn tortillas and cream of chicken soup. I substituted a crushed garlic clove for the garlic powder and added 1/2 tsp chili powder and 1 tsp cumin. Otherwise I followed the recipe. Even picky DS liked it. Thanks for the great recipe.

Iced Mocha Latte

This would be 5 star if you used a richer milk, but with the non fat it is very good. I didn't think 1 tsp of coffee crystals would be enough but it was for me. I tried it with and without the cinnamon and prefer without. This will save me lots of trips to Starbucks and therefore lots of $$$! Thanks for the great recipe.

J.P.'s Big Daddy Biscuits

These were very good. I used margarine & non fat milk, cut the recipe in half and baked them in my cheapie toaster oven. I was careful about the amount of milk I used as suggested by other reviewers, but I could have used less I think because the biscuits were pretty heavy. They raised wonderfully in the oven, but "deflated" a little when taken out. But all in all very good. Thanks for the recipe.

Eggnog Quick Bread

Keeping in mind all the discussion on moistness, I tried the following: increased the eggnog by 1/4 cup and decreased the flour by 1/4 cup. I used dark rum and 1 tsp of nutmeg. I got a moist spongy loaf that didn't taste at all like eggnog. It wasn't bad, just not what I was hoping for. I'll keep working on it because I think there is hope here for something really good.

Chicken Livers with Gorgonzola Polenta

I made the polenta again tonight with the following changes: double the amount of chicken broth; add 2 TBS butter; substitute parmesan cheese for the gorgonzola. This version got a 5 star reception from DH who is not a big polenta fan. This makes a very nice soft polenta.

Mom's Stovetop Pork Ribs

I used bonless country style ribs (they were on sale ;), used only 1/3 cup low sodium soy sauce and eliminated the cilantro (not a big fan). The ribs came out great--very rich and not too salty. I used the left overs to make enchiladas--very tasty. Thanks for the great recipe.

Seafood Sandwich

This recipe really screamed out for celery so I added a couple of tablespoons finely chopped. The result was a nice seafood salad that was overpowered by the flavor of the hot dog buns I used. I stuffed a tomato with the leftovers and got a much tastier dish. DH complained that his sandwiches didn't have much flavor but loved the stuffed tomato. Next time I'll add a little more onion and seasoning (used Seafood Magic since I didn't have Old Bay). Basically this is a great recipe--thanks.

Bucket Salad

I scaled this down for two, added a small can of kidney beans and added a little cumin to the ranch dressing. My husband (who hates ranch dressing) loved it. This is a great recipe that I'll be making again. Thanks.

Yankee Salad

I sent this with DH today for a company picnic and he came home with requests for copies of the recipe, so I guess it was a hit. I made only half a recipe, which was plenty and replaced the cherries with strawberries. I will make it again for our annual Memorial Day BBQ and add more fruit. Thanks for the great recipe.

Blue Cheese Burgers

I would give this more stars if I could. I used a 1.25 package of ground turkey and adjusted the seasonings accordingly--sorry I can't give you the exact amts but I did use the whole 4 oz of blue cheese. Made 6 patties and froze 3. The first 3 were cooked on the George Foreman grill and the last 3 just pan fried. They were great both ways. Due to the high cost of chives at my market, I think I'll try green onions or finely chopped red onion next time. Thanks for the great recipe!

Tangy Grilled Pork Tenderloin

I used what I had which was no honey and no dijon mustard. I used French's honey mustard, added soy sauce and replaced the salt with garlic salt and onion salt. It has been so hot that I grilled this at 8:00 a.m. and then refrigerated it. It was great cold. I took the left over marinade, boiled it for 10 minutes and added a little tomato based bbq sauce and served it over the meat and brown rice. I'll try it again when I have all the right stuff.

Garlic Cheddar Chicken

I used turkey cutlets (no need to pound thin; only took 20 min to cook) and seasoned bread crumbs. I would give it a 5 but the dish was so greasy. Next time I think I'll brush just the tops of the cutlets with the garlic butter and press the bread crumb/cheese mixture on top. Also, couldn't taste the cheddar cheese at all so I think I'll just use the parmesan. Thanks for the recipe.

Sausage Meatball Sub

I was looking for a recipe for meatballs using only Italian sausage so I tried this one. Exactly what I was looking for. I didn't make sandwiches with them but put them in a ravioli casserole. They did the trick.
