Slow Cooker Chicken and Dumplings

I was looking for a lower fat version of chicken and dumplings than I usually make and was hoping this would fit the bill. I wish I had listened to the little voice in my head that told me that 5 hours on high was too long for chicken breasts. The chicken was very dry. Maybe 5 hours on low would have been better. That being said, the flavor was very good. I made low fat bisquick dumplings which worked well. Husband really liked this especially the left overs the next day.

Smothered Potatoes

These were wonderful even the next day. No need to peel the potatoes, just scrub well. I made a few changes based on other reviews; doubled the onion, used a low sodium BBQ seasoning instead of salt and pepper and used some left over beef broth I had in the fridge. To insure that they weren't dry I added a little broth every five minutes or so and stirred well. They were perfect.

Barley Burger Stew

We really enjoyed this dish. I added chopped carrots, used V-8 juice instead of tomato juice and substituted cumin for the chili powder. Also added a bay leaf. The left overs were wonderful on a rainy Sunday. Will be making this again.

Hawaiian-Style Chili

I've never rated a recipe before officially serving it but I will give it 5 stars because hubby has been sneaking small bowls of it out of the crockpot all afternoon. Fortunately there is enough left for dinner. I had a little taste too and really like it. I followed directions except reduced onions and omitted chili pepper and salt as I used pinto beans in chili sauce that is plenty spicy for us. Finished it up in the crock pot because we like the onions and bell peppers pretty soft in our chili. Also used crushed pineapple with the juice. I think this is our new favorite chile. Thanks. UPDATE: I've made this several times since I rated it the first time and we still love it. Last night I maded it with no ground beef and it was still great. I did double the amount of beans to take the place of the beef. Love it, love it, love it.

Marinated Salad

This recipe gets 5 stars with my changes; omitted bell pepper and substituted chopped water chestnuts for celery. Our dinner guests raved about it asking for the recipe. This salad is really better in a day or two. It does make a lot of dressing but it's great sopped up with some good sour dough bread! I'll be making this in place of my usual 3 bean salad. Thanks.

Lemonade Pie IV

Made this twice once with great resluts, once not so great. I used limeade both times but the second time I bought low fat Cool Whip by mistake and ended up with a runny mess that didn't set up. So I ended up freezing the pie which ended up tasting as great as my first try. Good thing that I made it the day before I was serving it. I also added some crushed pretzels to the graham cracker crust I made hoping for a Margarita type pie. That was a nice chang.

Baked Spaghetti

Good but not great. I followed the directons exactly except added a can of sliced mushrooms. Don't think I'll try this again as the family said they would prefer normal everyday spaghetti.

Imitation Crab Salad

This was excelent. The only change I made was to add about 1/2 cup thawed frozen peas becuase I like the crab-pea combination. I considered making only half the recipe since there are only 2 of us but am so glad I didn't. It was great the next day for lunch.

Crab and Swiss Quiche

I've made this twice; once with 2 eggs and once with 3. Definitely prefer the 3 egg version--much firmer. I slipped a frozen pie crust out of the aluminum pan and into a pyrex pan; the frozen crust molded to the pyrex pan shape nicely. I used low fat milk and mayo. Next time I think I'll add some chives or shallots.

Chutney Chicken Salad

I'd give this 10 stars if I couold. Wonderful meal for a very hot evening. I substituted lemon juice for lime and added celery, seedless grapes, and sprinkled on chopped chopped cashews just before serving. DH who HATES curry gives it 4.5 stars which is really saying something. Thanks for the great recipe.

Mayonnaise Biscuits

These were certainly easy enough. I was a little worried about how soft the dough was but they turned out fine. I used low fat mayo, nonfat milk and added about 1T of Splenda. Hubby liked the cake-like texture; I would have prefered a flakier biscuit--so the rating is a compromise of his 5 and my 3.

Maurice Salad

I'm not familiar with this salad so don't have anything to compare it to, but I wish I had listened to the little voice in my head which said "this is too much Swiss cheese". After picking a lot of it out the salad was very good especially the dressing. I'll try again with less Swiss.

I followed suggestions from other reviewers--doubled the orange juice, halved the soy sauce and used brown sugar. Otherwise followed recipe exactly. Sauce was great; I think I'll try it with chicken.

Tartar Sauce I

This tartar sauce saved some otherwise not so tasty crab cakes. Other than using low fat mayo I followed the recipe exactly. No more store bought for us.
