Lemon Thyme Rice

1 tsp thyme is plenty. I doubled the lemon juice because we like lemon; but it still needs something. Good recipe to fool around with.

Pina Colada Rum Cake

Just perfect!! I have also used the frosting part of the recipe (minus the rum) on a two layer pineapple upside-down cake--just a little frosting in the middle and the rest around the sides. It was gone in minutes.

Best Lemonade Ever

Not labor intensive at all if you get your better half to go pick the lemons and then squeeze them for you ;) Ended up using 2 cups of lemon juice to get it to the tartness I like. Better half still thought it was still too sweet, but he did find it very refreshing. This recipe is a keeper.

Summer Zucchini Casserole

I made some changes based on what I had. No carrots, sauteed the zucchini and onions, used cream of celery soup, & added left over chicken fingers. Also I put the stuffing only on the top because there didn't seem to be enough for both top and bottom. Thanks for the recipe--it's a good jumping off point. Oh...low fat sour cream is just fine and I used 1/4 cup butter and 1/4 cup chicke broth for the stuffing.

Best Chocolate Chip Cookies

Once I figured out how long to cook them (12.5 min at 325 convection) I was very pleased with them. These cookies go from underdone to overdone in about a minute, so watch them carefully. I did follow the advice of spooning the flour into the measuring cup instead of dipping the cup into to the flour so they weren't too cake-y. Used milk chocolate chips. They were great but still not as good as my friend's chocolate chip cookies and she will not share the recipe!

Sour Cream Cucumber Salad

The only change I made was to add 1/2 packet of splenda as the vinegar was a little overwhelming for my taste. Used the first cucumber from the garden and it was wonderfully crisp and flavorful. We'll be enjoying this recipe all summer.

Great reviews from my Memorial Day gang. I made them by the pitcher so guests could easily serve themselves over cubed ice. I reduced the amount of grenadine by half because the "test" drinks were way too sweet. Also used Dole orange/pineapple juice. I always have a signature cocktail for Memorial Day and this is the best so far.

Lighter Banana Muffins

I've made these twice now. I halve the recipe but use 2 full bananas. Very moist and tasty. Only complaint is that the texture is a little chewy compared to other muffins.

Lyndsie's Dr. Pepper® Meatballs

I made the recipe exactly as written and loved, loved, loved the sauce. But...the meatballs were way too mushy for our tastes. I will certainly make the sauce again but will use my regular turkey meatball recipe instead. Note...there must have been some kind of Dr. Pepper shortage in our area. 2 major supermarkets were out and the mini mart I finally went to had only one 20 oz bottle.

Scalloped Potatoes and Onions

My new favorite scalloped potato recipe. The only change I would make is to increase the sauce as mine turned out just a tad dry but the flavor was great. Only needed 1.5 hours in the oven but sat nicely covered on the counter waiting for the rest of the meal to finish. Great recipe.

Slow Cooker Cranberry Roast

I was concerned about the beef/fruit combination like others...but it came out very good. I used a 7 bone roast that I browned well before putting in the crock pot. My only complaint was that there was not much juice so I did not thicken it. I served it on top of mashed potatoes. Will be making again.

Hobo Stew

I could tell just by reading the recipe that it was going to need some punching up. So the 4 stars are based on my additions. I browned the meat with a half an onion chopped and added garlic powder. I used Italian seasoned diced tomatoes and substituted beef consumme for the water. It still needs more seasoning. And next time I make it I will use salad macaroni; the elbow mac "grew" substantially and was just too big compared to the size of the veggies. All in all it's a good recipe to adapt to your own taste.

Strawberry Cheesecake Quesadillas

I used this recipe as a jumping off point. These are great. I used Knudsen's cheesecake flavored cream cheese, omitted the jam, browned them in a little butter and sprinkled cinnamon sugar over the finished quesadillas. I didn't find them messy at all. I let them cool a but before I cut them with a pizza cutter.

Crustless Spinach Quiche

I substituted broccoli for the spinach and cheddar for the Muenster becahse that's what I had. DH is diong the low carb thing and really enjoyed the quiche. He asked me to make it again. I hate broccoli so had a Trader Joe's Mexican Quiche instead.
