Berdean's Cube Steak

The cube steaks were perfectly tender in 60 minutes I added sliced onions and used chicken Better Than Bullion because I had it. Very reminiscent of my mom's cube steak. Served with mashed potatoes and broccoli. Didn't use milk for the gravy; just added corn starch to thicken the pan juices. I think the complaints of meat turning out too dry and water boiling away can be easily corrected by turning the heat down; start checking for tenderness in an hour.

Slow-Roasted Beef for Sandwiches

I followed the steps exactly and it came out perfectly using the probe that came with the stove 13 years ago, that I've never used. Thanks to Linda (LMT) for the excellent directions for using said probe. Thanks bd, you've got a real winner here.

Chinese Pot Roast

A lot of ingredients for not much flavor. I used garlic powder instead of garlic salt and used only 1 tsp black pepper otherwise followed directions exactly. I might try again, using less water

Shredded Beef Chimichangas

5 stars for method. 2 stars for flavor. The beef really needs some help. Next time I'll add onions, oregano, bay leaf and some diced green chiis. DH loved it as is. Served with sour cream, lettuce, salsa and guacamole.

Split Pea Soup without Pork

7-Up® Biscuits

These are great **IF** made correctly. Do NOT put the melted butter into the batter. Put it in the bottom if the baking pan and put the formed biscuits on top. AND...only use 1/2 cup soda. I used diet Squirt because I had it.

Bill's Sausage Gravy

This was the first time making sausage gravy and it was delicious. I used Jimmy Dean sage sausage because it's what was on hand. It was even better 2 days later. This was a trial run for my soon to be DIL and I can't wait to serve it to her. Served with 7 Up Biscuits from this site.

Country Apple Dumplings

This has been in my RB for a long time. I halved the recipe (which fit nicely in an 8x8 pan) and baked the entire 45 minutes. I think some of the low reviews may be due to undertaking. They "looked" done at 30 Minutes but I let them go the full time and am glad I did. Nice crispy tops, soft bottoms in a thick sauce with no artificial taste. I used diet squirt which worked fine, but next time I am going to use Trader Joe's flash pasteurized apple juice. I wouldn't hesitate to serve this to company. Also no need to peel the apples. Thanks for the recipe.

Margarita Cake with Key Lime Cream Cheese Frosting

Everyone but me loved this cake. I made it into cupcakes exactly as written and they were perfectly done in 18 minutes. I added extra lemon zest to the frosting because you can never have too much lemon. My only complaint was the texture of the cake. It was just "off", kinda gummy even though fully baked. But no one but me seemed to notice. So 3 stars from me and 5 stars from everyone else.

Finally, A Perfect Fried Chicken Recipe

A huge disappointment. The chicken itself was OK but the breading stuck to the bottom of the pan when I turned IIt and what remained was not very flavorful. If you're looking for the perfect fried chicken, this is not it. My quest continues.

Gramma's Apple Bread Pudding

Actually 4.5 stars. This is a nice soft bread pudding but I like it a little firmer so I'll add another egg next time. This has great flavor and IMHO doesn't need the sauce, which I ended up not making. I plumped the raisins first and sautéed the apples in the butter as suggested by another reviewer.

Roast Beef cooked in Pasta Sauce The Italian Way.

This recipe needs to be kitchen approved. It is wonderful. I've been looking for something that stands up to my creamy soft polenta and this is it. So rich and delicious. Hubby asked for mushrooms in it next time and I'll try that; otherwise it is perfect. I served it with steamed zucchini and soft cheesy polenta. TY manella.

KISS Salmon

A big FIVE from hubs. He absolutely loved it. I used seedless blackberry jam because I had it and Jack Daniels Original BBQ sauce. 20 minutes at 400 was perfect in my oven. I think you could make this with any jam or preserves you like. In fact the photo looks like the photographer used apricot or peach jam.

Mom's Applesauce Pancakes

It's too bad you can't review a recipe that you tweaked without having to give it stars. I was determined to make this recipe work using Bisquick since I don't keep pancake mix in the pantry. I made them as stated BUT only used 1 cup of Bisquick and let the batter stand 5 minutes before I tried to cook them. The batter was perfect in consistency but I found I had trouble not burning them and they didn't puff up much. I ended up wasting most of the batter until I realized that "low and slow" worked. If I ever have any pancake mix in the house, I'll give them another try.

Beef Peach Pie

To quote a dear friend "Who'd a thunk it?" Peaches on Meatloaf!!! I made it as written except used a 10" deep dish pie pan so the grease would have someplace to go. Hubby loved it; it was just a bit sweet for me. It won't replace our usual meatloaf but I'll make it again and I think I'll sub chili sauce for the ketchup.

Ida's Lemon Mousse

I am so glad that I didn't let the reviews that stated that this was too, sweet, tart, lemony deter me. And I'm so glad that I made it a day early. The day I made it, it WAS to sweet, tart, lemony!! But by the next day all the flavors had magically smoothed out and it was delicious. I served it in pretty martini glasses with a dollop of Cool Whip for Christmas dinner dessert.

Classic Rice Pilaf

I tried this more for method rather than flavor and it scores a big ole 5 in both areas. No saffron in the house so omitted that and omitted the salt. Will add a little salt next time. It was perfect after the 10 minute standing time. Next time I think I'll add a little garlic and jus a small squeeze of lemon juice. You have to try this.
