Baked Denver Omelet

Nothing special. Made exactly as directed only subbing red bell pepper for green. It was overcooked at 20 minutes in my oven.

Honey Mustard Oven-Baked Chicken Tenders

So easy and good. I made my own panko using some sour dough English muffins and baked on a rack at 425 convection for 10 minutes. Then turned them over and turned off the heat and left in the oven for 5 more minutes. They came out beautifully crispy and tasty. This one is a keeper.

Chinese Fried Noodles

Better than I expected. Made half a recipe for 2 of us and wished there was more. I doubled the veggies and used the whole seasoning pkg but no soy sauce. DH really enjoyed it also.

Oven-Roasted Asparagus

Perfectly done in 12 minutes using all ingredients called for except salt. However, I really like the flavor of asparagus and found the parm and garlic masked this. I'll keep the technique but serve with a little lemon aioli in the future.

Crazy Bread

Cream of Chicken and Gnocchi Soup

Pretty rich but very, very good. I subbed thyme for rosemary (personal preference), omitted the salt and used half butter and half olive oil; otherwise made as directed. DD, who was visiting for the day, said she was glad she stuck around for dinner--high praise indeed. We all agreed it would be just as good without the gnocchi, in fact DH would prefer it that way. Served with the Crazy Bread on this site and Caesar salad. UPDATE...served to a group of friends yesterday for lunch without the gnocchi and it was great. One friend asked if it was an Olive Garden copycat and if so, it was much better.

Healing Cabbage Soup

I think the key here is to double the tomatoes and don't drain them. This made for a very flavorful broth. I used chicken broth from a carton, added carrots and celery and omited the salt. Only thing I didn't care for was the cabbage-- forgot how much I really don't like it cooked. Otherwise I enjoyed it. Next time I would add a bay leaf and cut the cabbage into big chunks so I could fish them out easily.. I like the flavor of cooked cabbage just not the eating of it. Random thought....maybe I could finely shred it and add it near the end of the cooking time. Trying to increase my veggie intake.

Crispy Pork Carnitas

Really, really good. Omitted 5 spice powder (didn't have any) but otherwise made as directed. Next time I'll up the cumin a little and cut back on the salt. Served as soft tacos with corn tortillas, salsa and guacamole. Thanks John for another great recipe.

Lemon Meltaways

Best eaten the day baked. I was ready to give them a 5 yesterday but didn't get around to it. Today they taste just a little off but still good. I tripled the zest in the cookie to ensure a strong lemon flavor. Used a lemon glaze instead of tbe buttercream. I think low ratings may be due in part to bakers using bottled lemon juice or lemon extract instead of fresh and/or not using zest. Use FRESH lemon people. There is no comparison. No problem with them crumbling; baked on parchment and cooled on the cookie sheet before moving them. Can't wait to try an orange version.

Linguine with Seafood and Sundried Tomatoes

I thickened the sauce a little with corn starch, doubled the tomatoes and added a squeeze of lemon juice in addition to the zest. Company worthy. Delicious.

No Roll Pie Crust II

I cant make a rolled pie crust to save my life so I wanted to like this, I really did. But even after a couple of tweaks (an extra tsp of sugar and a tsp of vanilla) it was still not very good. All I could taste was the oil and it had a "sandy" not flaky texture. 1 star for ease and another star because it wasn't absolutely horrible.

How To Make Focaccia

Would give 10 stars if I could. I used Italian seasoning instead of all rosemary (personal preference) and rapid rise yeast (because that's all I had). Otherwise followed recipe exactly and ended up with a delicious, fragrant "loaf" that took 3.5 hours, start to finish. Best eaten the day of, but left overs made tasty egg salad sandwiches the next day. Another hit for Chef John. You HAVE to make this bread; if I can do it anybody can.

Evin's Indian Apricot Chicken

4 stars since I tweaked it a bit. Used fresh garlic instead of powder and halved the hot sauce. Also used apple cider vinegar. Otherwise made as directed. Very, very good result. Perfect balance of sweet and sour. Next time I'll add some curry powder and ground cumin for more of what (I think) would be a taste if India. Served with basmati rice and steamed zukes.

Broccoli and Cheddar Quiche

Whoa...way too much oregano and I only used 1/2 tsp based on reviews. I made it crustless and it was perfectly baked in 30 minutes. I won't be making this again; there are so many better recipes on AR.
