Sam's Famous Carrot Cake

This is an easy and excellent recipe for carrot cake. I cut my sugar to only 1/2 cup, and it was plenty sweet from the pineapple and raisins. What a beautiful springtime cake with fresh carrots! So easy to whip together. Will never have to buy another carrot cake again!

Nannie's Hot Milk Sponge Cake

This tastes like a boring bread made of flour and sugar, with no interesting texture or taste whatsoever. I changed nothing in the original recipe, except added some raisins to the batter, which is the only salvation to the bread. While it was quite easy to make, there was no fun in eating it.

Apple Pumpkin Muffins

These were easy to make. But I find them a bit too bland and too caky. You can hardly taste the pumpkin in it. I used fresh pumpkin, which does superb in a pie with great flavor. But these are not very interesting. Just a sweet muffin.

Macaroons

My macaroons rose beautifully in the oven, but as soon as they came out, they went flat. Don't know where I went wrong. I usually score big on my first attempts. But this was not a good result for me. Think will stick to my cookies, cakes, and pies instead.

Gingerbread Men

I love these cookies, can't get enough of them. They're delicious and chewy. When I got the dough mixed, I felt a bit uneasy b/c the dough was quite tough. But after rolling them out, it soften a bit. The cookies turned out beautiful, I made a simple white & green icing for decor. The kids loved them. But most of all, I loved the chewy texture of the cookies! Very easy to make.

Sensational Strawberry Shortcake

Super easy to make, it rose to a beautiful golden color in the oven. When it came out, it was just perfect. We added the sugared strawberries and whipped cream, everyone had seconds. So simple to make, instant success!

Good Old Fashioned Pancakes

soo soo soo good, and sooooo easy to make! I don't know why anyone would buy pancake in a box, and you'd still have to add your butter and eggs. Why not make from scratch where you know all your ingredients inside. These are super fluffy and tasty, very quick to make. Will keep this recipe for a long time!

Downeast Maine Pumpkin Bread

This is indeed delicious and moist, very delightful bread to make in the winter. I used fresh pumpkin, always tastes better than the canned puree. I found 2 cups of sugar is plenty sweet, half white sugar and half brown sugar. I can't imagine using 3 cups of sugar for this. I ended up with 1 loaf of bread (baked for 1hr10min) and 15 muffins (45min). This was easy and beautiful. Will definitely make it whenever I can. I will try other reviewers' suggestion and do a cinnamon butter drizzle on top next time.

Cheesecake Bars

Did this for a potluck, super easy to make, and tasted great! Everyone thought it was a restaurant quality cheesecake. Excellent for dinner parties and finger snacks. Kids love them too. Don't have to change a thing.

Homemade Fresh Pumpkin Pie

So yummy and super easy to make. I made it 3 times this fall with fresh pumpkins, my family and friends loved it. Love the taste of rich pumpkin, so sweet, yet so healthy. This is definitely a keeper!

Apple Crumb Pie

Super easy to make, and tasted great. My apple ended up a bit runny, so I overbaked it a few minutes. That made the crumbs on top too crispy. Next time I'll just take out the pie and let it cool down and come together. Overall, very tasty pie.

Holiday Wreath Treats™

These are so simple to make, we did it in no time at all, and looks great at the end. Except the buttered hands get quite messy, and my first couple of ones weren't that great. So butter your hands b/w each wreath, that's the secret to this. But overall, it was a great treat for my kid's class, they really enjoyed, and it's a different twist from the traditional cookies and all.

The Best Chocolate Cake You Ever Ate

This was a really easy cake to make. My first chocolate cake ever for a friend's bday. It turned out really well. I have no complaints, but it tasted a bit too sweet. I think those 2 cups of confectioners sugar for the frosting is a bit too much. But then again, everyone's taste is different. That's why I only gave it 4 stars. Otherwise, it's very moist and tasty with a great texture.

Mexican Rice III

This is a simple and tasty rice dish. You can easily mix it up with your own ingredients. I didn't add the peppers or cilantro (didn't have it on hand). But mine turned out REALLY yummy. I cooked olive oil directly in the rice cooker, added onions and crushed garlic, sauteed for a little while before I added rice. I stirred the mixture for 2-3 minutes before adding the chicken boullion soup and tomatoes. It cooked perfectly in the rice cooker. Definitely a keeper for future rice dishes.
