Garden Fresh Tomato Soup

Very good. Doubled the recipe. Added 1/2 cup milk, as I like a creamier soup, plus a little balsamic vinegar and dried basil at the end, as suggested by other reviewers. I think I may cut back on the salt just a bit next time.

Apple, Cranberry, and Pear Crisp

this was fabulous! I used the apples and pears I had on hand (2 very ripe pears, 4 small-ish apples-2 green & 2 red) and only used 6 tablespoons of butter in the crumb topping. I baked it for a bit longer too, as I like a really crispy crisp.

Scalloped Potatoes and Onions

Texas Chicken Quesadillas

ok, but the filling was kind of sweet, and husband and I both agreed that we like our quesadillas fried, not baked. I would make again, but would probably work on the filling, leaving out the honey, and spray the top tortilla with cooking spray to get it to crisp up a little.

Microwave Popcorn

this is very good, very easy, but 1/2 cup was too much for the bag. Even 1/3 cup was too much, and the bottom of the bag blew out. I will use 1/4 cup popcorn next time. I do not use the salt or oil (I like it plain). As others suggest, I fold the bag once and staple, but I watch it the whole time it's popping to make sure there is no problem. Soooo much better than the prepackaged stuff!

Pumpkin Chocolate Chip Muffins

My extremely picky niece liked these! I followed other reviewer's suggestions, and substituted applesauce for oil, upped the pumpkin (used one 16 oz can for a double batch), and lowered the oven temp to 350 and adjusted the baking time accordingly (used the toothpick test for doneness). I also used mini milk chocolate chips-they seem to disperse better in the batter, instead of dropping to the bottom. They came out moist and yummy! Remember that if you don't use any oil, the muffins will stick to cupcake liners, so you may want to spray the tins instead. The recipe as written is fairly healthy (for a dessert), but eliminating the oil may tweak it just enough to make it truly a good-for-you snack (3 grams of fat per 100 calories)! Definitely will make it again!

Four Cheese Margherita Pizza

This was soooo good! I followed the recipe exactly, well, mostly. First change: I used my homemade whole wheat crust recipe instead of Boboli. Second change: Cooked on the grill on foil pizza pans instead of in the oven. Poked holes in one pan to see if it would crisp up better--really, not much difference. Great crispy crust, but the top didn't brown. The cheese was melted though, and that was good enough for us. Third and final change: On one of the pizzas I added onions, mushrooms and zucchini that I sliced and nuked for a couple of minutes. Oh, another change: I left out the salt. It was not necessary. Thank you for the recipe!

Greek Pasta Salad

This was pretty good, but there is no way this is only 8 servings...12 would be more accurate. Also, I doubled the dressing, because the pasta soaked it all up and the noodles seemed dry. I used whole wheat pasta, swapped out mushrooms for olives (I detest olives...), and added a drained can of artichoke hearts. My other changes were incidental (no cherry tomatoes, used 1 small-ish tomato, white onion instead of red (all I had), 1/2 red and 1/2 orange pepper instead of green (again, all I had)). It had very good flavor, and is a good recipe for a crowd.

Maple Glazed Chicken with Sweet Potatoes

This was fabulous! My husband is new to sweet potatoes and he thought they were great as well. Didn't have green onions, so I sauteed an equal amount of white onion for a couple of minutes before I added the maple syrup. We will make this again!

Big Al's Chicken

Very good! I used 1 tsp of salt, based on other reviews. Doubled the recipe for 10 chicken thighs, but I don't really think I needed to. Nice and juicy, even with 15 minutes extra grilling time (20 minutes didn't seem like enough time, so hubby used a meat thermometer and it took him 15 extra minuted to get chicken to well done stage). Guests enjoyed it!

Spaghetti Carbonara II

This was good and simple...just what I like! Hubby had never had anything like this, and he approved as well. I lightened it up with turkey bacon; next time I will use EggBeaters instead of eggs. I also used whole wheat pasta. I forgot to add the parsley, but it was good without it. Paired it with a blue cheese bruschetta from this site, and steamed broccoli. Can't wait to have it again!

Tasty Maple Trail Mix

Man, this stuff is good! However, I modified it a bit, because it was just too "wet" as written. I make the sauce as directed, but I use 1&1/2 times the amount of all the other ingredients. I bake it at 400 degrees for about 25-30 minutes, and that makes it just right for our tastes. I have since experimented with different dried fruit blends (tropical, etc) with equal success. It's a healthy snack staple in our house!

Ham and Broccoli Quiche

Great flavor, but will use a little less cheese next time, and more vegetables. It was quite watery, but I may not have drained the broccoli enough. Like another reader, I had to bake for an hour before it was done. I have a quiche recipe that uses Bisquik instead of a conventional crust. I think I like the Bisquik style better than the crust, but not enough to matter much. The crust seemed to make it taste a little too salty, is all.
