This was pretty good, but there is no way this is only 8 servings...12 would be more accurate. Also, I doubled the dressing, because the pasta soaked it all up and the noodles seemed dry. I used whole wheat pasta, swapped out mushrooms for olives (I detest olives...), and added a drained can of artichoke hearts. My other changes were incidental (no cherry tomatoes, used 1 small-ish tomato, white onion instead of red (all I had), 1/2 red and 1/2 orange pepper instead of green (again, all I had)). It had very good flavor, and is a good recipe for a crowd.
