I am a full-time teacher at a local prison, and a part-time architectural drafting student, so quick and easy meals are a must right now!
My favorite things to cook
I love to cook comfort foods, but also like to try more complex meals when I have the time. Favorites to cook have to be soups--I love soup, and can eat it year round!
My favorite family cooking traditions
I think I only have a few traditions. I make my own hot cocoa mix, which years ago my 4-H group named "Magic Pam." There are people in my life who MUST receive this every year for Christmas! I also make certain cookies and treats around the holidays. At Christmas I always make an overnight casserole that bakes while we open gifts, but the casserole itself changes from year to year.
My cooking triumphs
Placing in a chili cook-off with a vegetarian chili; winning a recipe contest with a vegetarian lasagna recipe; my other triumphs only consist of the appreciation of my friends and family of my cooking, be it simple or complex.
My cooking tragedies
LOL I have forgotten to add ingredients, added the wrong ingredients, cooked too long or not long enough, you name it! Not much has had to go into the garbage can, you can usually save a recipe somehow. The one that comes to mind is a pie crust recipe that I got from 4-H that mixes right in the pie pan. I thought it would be great for making chicken pot pie, but I forgot to NOT put in the sugar called for in the recipe...THAT was a taste combination I could have lived without!

Garden Fresh Tomato Soup
Very good. Doubled the recipe. Added 1/2 cup milk, as I like a creamier soup, plus a little balsamic vinegar and dried basil at the end, as suggested by other reviewers. I think I may cut back on the salt just a bit next time.

Apple, Cranberry, and Pear Crisp
this was fabulous! I used the apples and pears I had on hand (2 very ripe pears, 4 small-ish apples-2 green & 2 red) and only used 6 tablespoons of butter in the crumb topping. I baked it for a bit longer too, as I like a really crispy crisp.
