Chocolate Icing

Perfect sugar cookie icing. The consistency was just right and the flavor was really good. I'm not sure why other reviewers had trouble with it setting up too quickly. I was able to ice 2 dozen sugar cookies without a problem. I even made it with baking cocoa instead of real chocolate and was very pleased!

Pie Crust IV

I must have done something terribly wrong because I did not care for this crust at all. I believe I followed the recipe exactly, but the pie smelled and tasted like straight shortening (although the consistency of the crust was perfect). We ended up eating the filling out of the pie and not even touching the crust. I can only imagine that somehow I used too much shortening (although I'm not sure how that's possible); but I've used other crust recipes that were delicious and very forgiving, so I'll stick with those.

Royal Icing III

Perfect! Just made a gingerbread house from scratch and used this recipe exactly (made no changes). It came out nice and thick, but still manageable. We propped up the house with can goods to help it set, but started decorating immediately. After about 10 minutes we didn't need the cans anymore. It even tasted good! This will be my permanent royal icing recipe.

Royal Icing I

The rating for this recipe was so good I didn't even bother reading the reviews--and I was super disappointed. I followed the recipe exactly and it's just as runny as the reviews say; and was pretty useless for making a gingerbread house (which is what I was making). I tried several times to construct my house with it, but the icing slid right down the sides and didn't even come close to filling in the natural nooks and crannies of the gingerbread--maybe some better bakers than me know how to make gingerbread houses with perfectly straight-edged pieces that would hold together with this icing. And you definitely can't do any decorating with it. I suggest using Royal Icing III by Veronica. It was the perfect thickness to be manageable while still setting fairly quickly.

Famous Butter Chicken

Tried this recipe twice so far. I took the suggestion of others and added some extra seasoning (Trader Joe's 21 Seasoning Salute). The chicken was pretty tasty, but I only cook it for about 25-30 minutes (half the time on one side, half the time on the other). Here's the dilemma: cooking for 25 minutes produces perfectly cooked and moist chicken, but the breading is a little mushy. I've noticed other reviewers complaining of dried-out chicken. Next time I'll try 35 minutes, and hopefully it'll be just right.

Salmon Rosemary Burgers

Tasty burger. I mistakenly bought horseradish sauce instead of straight horseradish, so the flavor wasn't as strong as I had hoped. But we topped the burger with a little extra sauce and it was perfect. Next time I'll do it the right way and I'm sure it'll be excellent. I only took off 1 star because I had a hard time getting the patties to stay together. Perhaps this is just the nature of the Salmon burger, but you really can only flip it once--so be sure it's done!

Mother's Ham Casserole

So, I ended up substituting a bunch of stuff to make this a healthier dish, but I was so pleased with the final result I thought the original recipe deserved a good review! If you want to try it my way, I suggest: -3 Cups Brown rice in place of potatoes -3 tbp. Smart Balance in place of butter -Toasted and crumbled whole grain/wheat bread Also, I only had plain, cooked ham and I wanted more of a honey-baked taste. So, I added a squirts of mustard and honey. It was soooo yummy and soothing and flavorful!

Sean's Mommy's Roasted Root Vegetables

Maybe I didn't do this right, but I wasn't impressed with this recipe. There wasn't that much flavor to the vegetables; and mine came out barely cooked--not roasted. I even left them in an extra 15 minutes. I think I'll try again just because I had such high hopes. I'm considering adding some additional seasonings and maybe covering them with aluminum foil at first to let them cook-through a little more.

Best of Everything Veggie Burgers

As per usual, I started cooking a recipe without all the ingredients. But, as not per usual, it came out really tasty. Basically, I substituted garbanzos for the black beans and horseradish for the hot sauce. It looked lovely, what with all the colors of the gold garbanzos, green bell peppers, and brown mushrooms. It was a bit of a challenge to flip them--I had about a 50% success rate--so I would suggest making sure they are really done on the one side first and only flip once. Other than that, they had a great flavor. We topped ours with lettuce, tomato, grilled onions, and a little more horseradish sauce (I love that stuff). Baked sweet potato fries and sliced peaches on the side.
