Mediterranean Chicken

Very delicious and I love that it is low fat. The recipe did not say if the tomatoes were to be fresh or canned so I used canned. I used less chicken than called for and diced it into the sauce. I didn't have Kalamata olives so used black. Very good over whole wheat spaghetti.

Spinach Enchiladas

Very, very good! I followed the recipe exactly except when it came to the enchilada sauce. I didn't have a 19 oz. size can, only a 28 ouncer. After measuring out 16 oz. and pouring it on I decided that it looked like enough and judging by the finished product it was just right. Thanks for the post.

Quesadillas I

I've made this with flour wheat tortillas and with the corn tortillas - they both were great! The wheat tortillas were a little larger which made it easier to fill and handle in the hot pan. I used pepper jack and cheddar cheese. Thanks for posting this delicious recipe Cody.

Slow Cooker Carnitas

I followed other reviewers advice and doubled up on the spices and next time I will cut the meat up into smaller pieces so that the spices can infuse on more surfaces. That said, I thought this was a wonderful recipe and I would not cut down on or cut out the cinnamon - it was a nice pleasant surprise whenever I got a hint of it. I made the best burritos and then some of the best enchiladas I have ever made using this recipe.

Cathy's Banana Bread

I had plans to make this bread but waited too long only to find that my bananas had gotten too ripe, so.... it became pineapple bread. I used fat free sour cream and substitued the margarine with applesauce. I also added about a cup of toasted walnuts. It was so moist and very delicious! Next time I will check those bananas sooner and use this recipe. Thanks for the post Cathy.

Sally's Spinach Mashed Potatoes

Really, really love this dish. We ate it as our entree instead of as a side dish - very filling. I used green onions, fat free sour cream and only half of the oleo called for. I will be making this often!

Olive Cheese Melts

I love olives so this was a no-brainer for me. I ate this both hot and cold and prefer it cold on a toasted muffin. I think a very small amount of fine chopped walnut would be good too.

Cottage Cheese Chicken Enchiladas

Great enchiladas! I used no fat cottage cheese and sour cream and drastically lowered the fat content without ruining the taste, which was delicious. I added a few olives that I had open, used cheddar (didn't have Jack). I layered instead of rolling, much quicker til dinner time!

Greek Lentil Soup (Fakes)

I really liked this soup and very glad that so many of the reviewers stressed that the red wine vinegar was a must. I like my soups very thick so I used only a little over half of the water recommended. Very good recipe.

Cranberry Swirl Coffee Cake

Very, very good cake. I don't have a tube pan so I used 2 pie plates and they turned out very well and only had to bake for about 40 minutes. I substituted apple sauce for the butter and it still tasted very rich. I also put the walnuts on top so that they could have that nice roasted flavor.

Spinach Artichoke Lasagna

Excellent, delicious recipe. I thought that there was a lot of liquid in the recipe so I decided to use uncooked regular noodles, it worked out very well as they absorbed all that water. I think I added about 10 minutes of extra oven time. A word of caution: check the sodium content of everything you put in this, some canned artichokes are very high in salt and if you use chicken boullion this can be too salty along with the sodium in the sauce.

Fruit Cocktail Cake V

Very delicious cake and so easy to make. I did cut down the chocolate chips and walnuts to 1/2 cup each and that covered the cake nicely. To save time a cake mix can be used with the same great results. Thank you Sharon for the posting.

Eggplant Croquettes

This was very, very good. I have to admit that about halfway through I got bored with making patties and dumped the rest of the mix into the frying pan and cooked it like hash. Tasted as good as the patties with the same texture. I did use olive oil instead of vegetable oil. A great way to use eggplant.

Bubble 'n' Squeak

I omitted the ham and bacon and used smoked Kielbasa instead. I fried the sausage in a non-stick electric skillet first and then added the onions and cabbage, cooked til tender and added the potatoes and seasonings to warm up. A super way to use cabbage fresh from the garden - delicious! Thanks for the post.

Smoked Salmon Pasta Salad

Great tasting salad! I made this with leftovers in mind so I waited until serving to add the cucumber - worked out perfectly. It's also good with a handful of frozen peas added at the last minute.

Summer Squash Burritos

I made this in a non-stick electric fry pan with non-stick spray. I added pepper and also used sour cream and salsa with the cheese and tomatoes. Delicious! It even reheats in the microwave nicely. One of the best ways to enjoy fresh zucchini.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

This was so delicious! The hint of curry is what I think really makes the sandwich. I used canned chicken (about twice the amount called for) instead of tuna but used the rest of the ingredients in the recipe, except the cheese. Served it with toasted pita pockets which I think really cut down on the fat grams. Thanks for such a great posting!

Chocolate Banana Bread

Although I changed the recipe so that I could cut some calories I don't think I changed the outcome, which was delicious! I used applesauce for the oleo, cut the sugar by one fourth and used no fat sour cream. I also added some chopped walnuts. Thanks for the post!

Delicious! I used my non-stick electric frying pan, sprayed with no stick spray. It worked perfectly and cooked quickly with the potatoes cubed small. I did add salt, pepper and minced garlic. This will become a regular at our house!! Thanks Jennifer for posting this great and easy recipe.
