Peanutty Pork Kabobs

The flavor is amazing! It's too bad I undercooked the pork a smidge. I'm about to try it on some chicken...I want to put it on everything!

Chicken Costa Brava

Very tasty! I couldn't stop taking little tasters! I agree with other reviewers. Each forkful does have its own flavor. What I did differently: I like cinnamon so I put a super heaping teaspoonful of that. Added CAYENNE and CURRY. I don't know if the spices really stuck to the chicken so I'm thinking it may have been better had I added those before the chicken was fully browned. Didn't have olives, so I used CAPERS. Used 1/4 c SIRACHA and 1/4 c SALSA. Was pretty spicy so I did add the MANDARIN ORANGES and a little of the juice. Used red, orange, and yellow mini peppers. I think I might have used like 3 TEASPOONS OF CORNSTARCH. It was all good. I'll make it again for sure and next time I'll use the olives. Sadly...I burned the rice.

Stuffed Peppers My Way

Very tasty. I browned some ground beef with the onions, garlic, and spices. I squirted some sriracha into the tomato mix for some kick and added about 1.5 tbsp of tomato paste. I topped the peppers with some shredded cheddar cheese and voilà! A delicious supper!

Thai Red Chicken Curry

Excellent dish! I do like a little more spice so I added more of the thai paste, some red pepper flakes, and curry powder. If I had sriracha I would've added that. Oh and I added garlic because garlic is a must in any dish. Put it over a bed of rice.

Quinoa Porridge

Delicious! However, it was very sweet for me. I made a double batch and tweaked it a little. I used 2 cups quinoa + 1 cup unsweetened almond milk and no water (except for a few tsp when it started to get too thick). Used about 1.5 tbsp brown sugar. Covered with a lid. Added cranberries at the end. Either it was the almond milk or brown sugar and the cranberries that made it too sweet. I will use the almond milk + water next time to see if that makes a difference. If you want it healthier, use less sugar. Just a side note - I've only made quinoa twice now but I think this time the quinoa didn't plump up as much as it did when I made it with broth. P.S. I didn't burn the pan! I will certainly make it again!

Spicy Italian Pork Cutlets

I went a little overboard on the red pepper flakes so it turned out super spicy. I subbed the dry white wine with white wine vinegar and put in a little extra broth. I also wanted it just a bit thicker so I added some canned tomato sauce. Probably would've been a better dish had I not gone overboard with the red pepper.
