I had some left over spaghetti squash and was tired of the marinara / tomato sauce route. I wanted something to accompany my fish - this took little to no time at all and the results were fantastic!!
I didn't follow the measurements specified, just eye-balled it. I sautéed the onions in EVOO, until it was the palest of golden brown. Threw in the minced garlic, crushed red chilli pepper, and roughly chopped basil. Mixed it all up and then added my spaghetti squash, a little bit more EVOO, roughly chopped tomatoes, kalmata olives, and small chunks of feta - it looks as good as it tastes!
I'm taking this for lunch tomorrow - mostly to see how well it heats up in the microwave. If all goes well, I know what I'll be bringing to my next potluck :)
