Sauteed Zucchini

The recipe was easy and good on it's own but I used chicken brother rather than the water and bouillon and added zucchini and yellow squash. The second time I made this, I added about 1 tbsp adobo sauce to the chicken broth which gave it a nice flavor and spicy kick. This will be a regular side dish for sure!

Black Bean Soft Tacos

I ended up making this pretty close to the recipe except added half black beans and half kidney beans. It ended up closer to a chili taste than a burrito taste. I ran out of tortillas and used it as a burrito bowl, placing it over brown rice, addding fresh tomatoes, cheese, avocado and sour cream. It's a good quick meal to warm up on a week night.

Figs and Toasted Almonds Brie

I have made this a couple of times and always a hit. My fiance LOVES this recipe. I used fresh figs when in season and the toasted almonds are a must! I did use dried figs once but it wasn't as good (too chewy).

Banana Banana Bread

GREAT recipe! Easy, fast and tastes great. I did not have a loaf pan so I made mini muffins and cooked them for 15 minutes. They came out perfect. Super moist and delicous! You definately would need 6 or more bananas to make this recipe. I added vanilla and little bit of nutmeg. A tip if this came out dense: 1. too much mixing. The wet ingredients and dry ingredients are stired just till moistened. 2. Your baking soda is old. If you place a little bit into a cup of water and no bumbling, replace it.

Cajun Chicken Pasta

This was a really good meal and fast as well! My modifications: - Used Creole Seasoning instead of Cajun. - Used more mushrooms because we love them. - used a large pot because once it get down to adding the cream, my skillet could not hold it all. - sprinkled some additional (1/2 teaspoon) creole seasoning into the cream sauce because the first time we made it, my fiance said it tasted like hot chicken in cream. Adding Creole Seasoning into the cream brought it all together. - Also let the sauce thicken up in the pan before serving. Without that, the sauce was a little too runny.
