Apple Chicken Stir Fry

Love the ease. I keep Chinese 5 spice on the shelf, added some and marinated the chix in teriyaki before hand. Excellent. Family love the secret ingredient - apple!

Perfect. Put them in the oven while everything else was going on and the family Loved it. Didn't use the horseradish either just for family preference.

Potato Salmon Patties

GLUTEN FREE Version... I substituted Corn Flake crumbs and season them instead of bread crumbs. Also used the green onions like others mentioned. Added a smidgeon of lemon juice and had fresh dill on hand. Did double the recipe. Family really loved them. A keeper.

Spanish Rice Original

I had too many dishes w tomato for this meal so I omitted tomato sauce/tomatos. Ditched the green peppers too as fam doesn't like. BUT, did the rest and used two cups chix broth. Fam loved it... the bacon and olives were "sneaky" flavors they really enjoyed. Most def do again.

Bacon Roasted Chicken

You but butter, then bacon on chicken fat. keep basting for a lot of work, with little reward. Will Way don't bother. Would much prefer the beer can chicken you put it in the oven and leave it alone.

Weeknight Lasagne Toss

Family liked it. I did put ricotta in mix but also reserved some. Put whole recipe in a casserole , and put reserved ricotta on top then added the recipe additional cheese. Placed in the oven @ 350 for about 20 minutes to get the baked bubbly toasty brown of the cheese just like lasagne. A hit. A keeper.

Simple Spare Ribs

Super tender...no flavor. The au jus was not appealing even to make as a gravy. Ended up basking bbq sauce and broiling a couple mins. The guys like em, but have better ways to make ribs tender with out all the broth and sauce

Garbanzo Bean Chocolate Cake (Gluten Free!)

For not being able to eat cake this was heavenly. Made it twice so far and can't figure out how to not have it fall apart b/c it's a tad dry. But super good. Dad and I both celiac. Will keep experimenting and let you know.

Chile Pork

TIME SAVER -- Used a packet of chile powder mix, and left over roast. Threw a can of chopped tomatoes w/ garlic, can of beans and let it simmer til rice was cooked. Same flavors, worked great as a "fast shot" after work. Family loved it.

Malidzano Eggplant Spread

Was looking for something a bit different for the eggplant in the fridge. I had all these items in the house..... WAS GREAT. I also had a bit of pesto and hummos leftovers and added about tablespoon and a half of each. Family loved it. Will bring it to the next gathering.

Beef Pot Roast

SUPER tasty and easy. Didn't have time to do crockpot so tried this one. Can't have traditional pot roast in my house with out the carrots and potatoes. So I sliced and chopped about 4 each and put a little oil and just enough beef broth to barely cover them to simmer in the dutch oven on the stove, while I seared the pot roast in a different pan. When done with the searing, put roast in dutch overn, spooned the carrots and potatoes over and around pot roast, did same with onions and bay leaf. AWESOME tender and flavorful, enough juice to make nice traditional gravy. Wasn't a bite left. Had spur of the moment company, made some egg noodles to surround it. Everybody was happy campers. May never use the crockpot version again.

Golden Baked Chicken

Great Gluten Free recipe. I used four large chicken breasts. The amount of coating could have been cut in half, butI saved it to the fridge to use on fish with the same concept. Also, I used light olive oil rather than butter, conserves calories, and serves the purpose with no loss of flavor. Wacky me also just forgot to take off the skin, and it still worked great... so much for healthier.... Kid and hubby loved it tasted like the store bought kievs, they said... great... a compliment that it tastes like store bought... oh well. Meat was juicy which is not always the case for breasts. Enjoy.

Cucumber Peanut Salad

Fabulous. Also was leery of the butter, but it was perfect. My cousin loves both cucumbers and peanuts and went crazy for the flavor.. Great, east, tasty, healthy. Bravo.
