Super Easy Hummus
Perfect! As is, or a starting place to tinker w your own fresh options. I added finely chopped broccoli stems, and parsley. And as said above, best after refrigerated a while, but good to go even on the run. Def, keeper.

Asparagus and Mozzarella Stuffed Chicken Breasts
I did marinate the chx in an Italian dressing. Precooked the asparagus. Did the cheese a mix of mozzarella and feta, added chopped green onions and a dash of oregano. After I rolled them, dusted in chopped walnuts. sigh. Quite good if my Mom and I say so ourselves.

Zucchini Boats on the Grill
Excellent. Par boiling was fabulous. For more punch and all goodies from the garden: I used a small can of Huntz sauce,1 cup cooked polenta, couple/3 tbls of parm, precooked 2 tbls fresh garlic chopped fine, and practically a cup of fresh basil. Roasted covered 10 min., uncovered threw on a covering more of parm, slice tiny tomatoes in quarters laid on top and back in the overn for 10 min more. Ridiculous!
