Roasted Winter Root Vegetables

I rarely give out 5 stars for anything, but this one earned them! My mother made this recipe last year and loved it. She suggested I try it. I only tried a rutabaga once before and wasn't a huge fan, but in this recipe you'd never know it wasn't a potato. Parboiling in advance makes this recipe super simple. Its easy to divide too, I made this for just my husband and I, so we didn't need 15 lbs of veggies. I used just 8 oz of each vegetable and estimated the rest of the ingredients. It turned out perfect. I will be making this again and again. Thanks for sharing!

Quinoa Pudding

We liked it. I followed the suggestions to use almond milk and the results were good- it had a presentation almost like rice pudding. I left out the lemon juice, like others suggested. I'd make it again.

Fresh Rhubarb Pie

Excellent! I would add more rhubarb next time (probably adjust the sugar as well). It cooks down and we like thick pies. But this may be our Memorial tradition in our house.

Fire Roasted Vegetarian Gumbo

I feel bad saying that, but this recipe needs serious work to be anything edible. The vegetables and spices compete with each other too much to make a complimentary dish.

Vegan Bean Taco Filling

This is too spicy as it is for us. We prefer the taste of the store bought taco seasonings so I just used the 1 teaspoon each of salt and paprika and 2 teaspoons of chili powder and omitted the cumin.

Eggplant Parmesan

Excellent. I love this fresh take on the classic. Fresh, unprocessed, healthy, natural. Can't wait to make it again. Next time I'll season it with salt and pepper to enhance the flavor. Otherwise, it's perfect.

Chinese Chicken Salad III

This was delicious and very easy. I'm not a huge fan of peanut butter flavored dishes, so I only used 1 T peanut butter and it was great. Oh, and I used cabbage instead of romaine.

Beet Salad with Goat Cheese

A very good salad for those of us who don't care for beets. I always thought beets tasted like dirt, but the candied walnuts and sweet dressing mask the beet flavor. I thought this was very good, even with crumbled feta, which was all I had. But I believe the smooth goat cheese is an even better choice. Thanks for sharing.

Lentil Chili II

We liked this recipe. I followed the recipe's spice amounts and I thought, although it was mild, still had great flavor. and it wasn't too spicy for my toddlers to eat. Eliminate the butter and you have a very good, easy vegan meal. Makes tons. My 6.5 Qt Le Creuset was barely big enough to contain it all. Oh, we did add a can of kidney beans (we like beans). Will make it again

Strawberry Cake Filling

Very easy and fast to prepare. It saved me a trip to the store. I only needed enough to fill an 8" round cake, so I made half the recipe (plus that was all the strawberries I had). The filling is a little too runny to fill the cake without a dam of icing, but it still held up well enough. Was wonderful with chocolate cake.

Creamy Pesto Gnocchi with Italian Sausage

This recipe needs some serious work. I made this because I wanted something new and I had all the ingredients to make this. To be polite it was not tasty at all. My biggest problem is that I did not like the texture combination of the sausage with gnocchi. I find that pesto on its own is quite delicious and adding the cream adding nothing to the recipe except calories and fat. If I were to do it again, I'd eliminate the meat and cream and add a heaping amount of fresh veggies.

Tangy Cucumber and Avocado Salad

I'm always looking for fresh vegetarian or vegan dishes and this one is fabulous. I loved the contrast in crunch from the cucumbers and creamy avacados. The lemon and limes juices were terrifically balanced. DH and I split this for dinner one night- very filling and satisfying.

Old Fashioned Coconut Cream Pie

I gave this only 3 stars because it tasted too much like a pie you would find in a diner. We wanted something with more of a sophisticated coconut flavor. I thought the coconut flavor was overpowering. Also, mine didn't set, but that could have been my fault.

Mouth-Watering Stuffed Mushrooms

These were good. I ran the mushroom stems through the mini-chopper first, then combined the whole filling using the mini-chop. Easy to prepare and baked up well.

Fruit Pizza

VERY sweet. But it was super easy. I prefer less sugar in the foods I give to my kids, so I may try the refrigerated croissant dough as a crust instead of the sugar cookie.
